Abstract:The use of gadung (Discorea hispida dennst.) tubers as food source is not seen as an attractive option due to dioscorine and cyanide anti-nutritional compounds contained therein. The presence of dioscorine and cyanide compounds makes gadung tubers known as poisonous food.
