The probiotic chestnut‐based dairy matrix: Influence on the metabolomic formation and the nutritional quality

Abstract: The aim of this study was to characterise the impact of mixed probiotic strains and fortification with chestnut beverage (CB) on metabolomic formation in a plant‐based dairy matrix. Bacterial growth, nutritional composition and metabolomics were investigated during the period of 21‐day storage. The amino acid score (AAS), essential amino acid index (EAAI), nutritional index (NI) and biological value (BV) of the samples were determined to characterise their nutritional quality. The fortification with CB increas… Show more

“…Using the FAO/WHO amino acid scoring model, this study calculated amino acid ratios (RAA), ratio coe cients (RC), amino acid scores (SRC), essential amino acid index (EAAI) 26 , biological value (BV), nutritional index (NI) and protein e ciency ratio (PER) for all samples. The calculation formulas are as follows: RAA = amount of a speci c essential amino acid / recommended amount; RC = RAA of a speci c essential amino acid / mean RAA of all essential amino acids; SRC = 100-RSD×100; and RSD in the formula represented for the relative standard deviation of RC; ,BV = [(1.09×EAAI 11.7] 27 , NI = (EAAI × Protein (%)/100), and n represented for the number of essential amino acids, n ≦ 8 28,26 ; PER = − 0.468 + 0.454(Leu) − 0.105(Tyr) 29 . EAAs, CEAAs, and NEAAs stand for Essential Amino Acids, Conditionally Essential Amino Acids, and Non-Essential Amino Acids, respectively.…”

“…Cancer, diabetes, and chronic inflammation are related to people's lifestyles and an unbalanced diet. As a result, the food industry seeks daily to add products with functional characteristics to the shelves, whether fresh or processed, such as fresh or toasted nuts and their derivatives, like flour, biscuits, and milk [11][12][13]. Therefore, this food is gaining prominence due to its characteristics that are beneficial to human health, as it is a rich source of bioactive compounds and essential nutrients.…”
