Honey has been employed since antiquity due to its sensory, nutritional, and therapeutic properties. These characteristics are related to its physical and chemical composition. For example, phenolic compounds are substances that can determine antioxidant activity, as well as sensory characteristics, and can be employed as biomarkers of floral and geographical origin. This has generated a growing interest in the study of phenolic compounds and their influence in the intrinsic properties of this beekeeping product. This review aims to summarize, analyze, and update the status of the research that demonstrates the role of phenolic compounds in antioxidant activity, botanical-geographical origin, and the sensory characteristics of honey. These phenolic compounds, according to various results reported, have great relevance in honey’s biological and functional activity. This leads to research that will link phenolic compounds to their floral, geographical, productive, and territorial origin, as well as some sensory and functional characteristics.

Honey is a prominent nutritional and medicinal production of honey bees, originating from the nectar of flowers. The physicochemical properties of honey serve as indicators of its freshness and originality. The current survey aimed to assess the parameters of quality control, including hydroxymethylfurfuraldehyde [HMF], reducing sugars, fructose/glucose, sucrose, proline content, distaste activity, and free acidity, in 25 honey samples of different brands available in Khorasan Province, Iran. We used the methods suggested by the Association of Official Analytical Collaboration (AOAC, 1995), the International Honey Commission (IHC, 2009), and the Codex Alimentarius Honey Standards for the study. Statistical analysis was performed in Microsoft Excel. The obtained data indicated that eight out of 25 analyzed samples (32%) complied with all the requirements and were generally of acceptable quality. Meanwhile, 17 samples (68%) were unconfirmed by the Iranian Standard Organization (ISO), including 12 samples with a low level of diastase (<8 Schade) and high levels of HMF (>15 mg/kg), two samples with high sucrose levels, two samples with high proline, and one sample with high HMF. These findings suggested their inappropriate storage (time/temperature), heat treatment, and/or adulteration with industrial sugar. According to the results, the examined honey samples produced in Khorasan Province were not of acceptable quality, which highlights the importance of an effective regulatory framework to be evaluated and rectified periodically and accurately to maintain consumer rights, as well as public health.

Honey occupies a special place in the diet due to its functional and medicinal properties. Honey consumption is significantly below the level recommended both in Russia and in the world. It is possible to significantly increase honey consumption both in the internal and foreign markets. The research aims to analyze and identify problems, obstacles and driving forces in the development of beekeeping in the case of Russia. Analysis showed that 18 Russian regions are focused on the export of honey to interregional and foreign markets. The beekeeping sector faces significant challenges in honey selling. The adulterated honey share is estimated at 30%. More than half of the honey on the Russian market is sold through direct short channels. Promoting products to metropolitan and foreign markets requires new approaches to building supply chains: data on apiaries and honey quality; optimizing supply chains and income distribution by chain links. The industry drivers can be a cluster approach; digital technologies to solve specific industry issues; new approaches in support of the industry by state.
