Abstract: <p><strong>Background.</strong> Habanero pepper (<em>Capsicum chinense</em> Jacq.) is a vegetable of economic interest, its fruits have unique characteristics of flavor and pungency. Its pungency is due to the capsaicinoids, which were the starting research interest on this crop.
