Use of Agro-Industrial Wastes for the Production of a Wild Yeast Enzyme with Disintegration Activity on Plant Tissues

Abstract: HIGHLIGHTS  Use of residues for the PGase production represented an economic and sustainable method.  The activity of PGase enhanced 37 %, with respect to the value obtained with original medium.  PGase of W. anómalus was able to disintegrate cassava tuber tissue and release the starch granules.
