Previous investigation [35] about the rheological behavior of olive paste showed that a torque method was a suitable approach to estimate the consistency index (K) and the flow behavior index (n), with which, the relationship between the viscosity and the flow behavior index could be calculated by an empirical Power law model. This characteristic allowed the use of a torque method as an alternative way to evaluate the viscosity.…”
