What Consumers Are Looking for in Strawberries: Implications from Market Segmentation Analysis

Abstract: An online choice experiment was conducted to investigate U.S. consumer preferences for attributes of fresh market strawberry fruit. Using a latent class logit model, three different groups of consumers are identified: “Balanced Consumers,” “Experience Attribute Sensitive Consumers,” and “Search Attribute Sensitive Consumers.” This information on consumer segmentation can help the fresh market strawberry industry identify target markets, and provides valuable information to breeders, growers, and retailers to p… Show more

“…In agricultural and food market research, the LCA has been established as a widely used method concerning choice experiments; for example, in a recent study Liu, Yan, and Zhou (2017) [25] analyzed consumer choices and motives for eco-labeled products in China. Furthermore, Wang et al (2017) [26] used a latent class logit model to investigate U.S. consumer preferences for attributes of fresh market strawberries. Regarding the health benefits of foods, Segovia and Palma (2015) [27] used an LCA to segment participants by their willingness to pay for vegetable attributes, including production technique, origin, taste, and health benefits.…”

“…In this sense, in wild populations as in the current case, a great genetic variability could be captured, since no breeding process had been performed to date [2,18]. Fruit weight and firmness are important traits both for the production and quality of strawberries, whose quality is sensitive to the market [19][20][21]. These results were consistent with those reported previously by Whitaker et al [22] in a F. × ananassa breeding population, in which broad-sense heritability values ranged from 0.18 to 0.53 for fruit quality traits.…”

“…Additionally, it computed the likelihood of each respondent belonging to each latent segment. LCA has been widely used for segmentation (Wang et al ., ; Meyerding et al ., ). The consumer cluster data resulting from the LCA treatment was then represented graphically using Principal Component Analysis (95% significance level) performed in XLSTAT (Version 2010.5.02).…”
