The necessity of milk whey treatment was substantiated taking into account the ecological situation and the vitality of preparation of protein-mineral concentrate (PMC) and lactulose-containing products. The electrophysical method of PMC preparation was examined and used. The protein fractions, particularly, their amino acid composition and digestion by proteolytic enzimes (characteristic of the pepsin-pancreatic index); the products of peroxide lipid oxidation; and the composition of nitrogen-containing compounds were investigated. The investigation results and the ways to optimize the proposed combined method of processing of lactose-containing raw material with a high lactulose content with a simultaneous decrease in the energy consumption were presented.
