The purpose of the research is to analyze the prospects for the production and processing of turkey meat to expand the range of culinary products. The technological potential of turkey meat for the production of culinary products has been considered. High biological value and dietary qualities have been noted. The turkey is considered to occupy a significant segment in the volume of poultry production, which is constantly increasing as a result of the growth in consumer demand. The volumes of production of turkey meat have been given and the largest domestic producers of turkey meat noted. The dynamics of production and consumption of turkey meat in Russia has been presented. The structure of consumption of turkey meat in Russia in % of the total amount of meat consumed has been given. The types of turkeys and their characteristics have been considered. The advantages of choosing turkey meat in comparison with other types of poultry meat are noted. According to its biological and economic characteristics, turkey meat is one of the most promising types. The range of culinary products from turkey meat, its chemical composition, fabrics, varieties have been considered. The industrial advantages of white meat compared to red meat have been shown. An assortment of appetizers, first and second courses is given. Data analysis shows that minimally processed turkey is an excellent source of protein, vitamins and minerals. Turkey meat is regarded to be the meat of the future due to its low fat content and high protein content. Turkey meat, due to its high technological potential, the absence of an allergic effect on the human body, is the primary raw material for the production of culinary products for baby food, dietary, therapeutic, preventive, functional purposes. To prepare new types of culinary products from turkey meat and expand the range of this group, it is advisable to use innovative sous-vide technology that preserves the maximum nutritional and biological value of the finished product.
Social networks have become an integral element of modern life and are a tool for making public opinion. Today, without them, communication and development of creative potential of the individual is unthinkable. This study was aimed at studying psychological adaptation of the followers of two Instagram accounts to the blocking of this social network. The subject of this study was the information (opinion of followers) received during the first day after blocking Instagram. As a research method, we used a sociological survey in «stories» using a questionnaire that included three questions with four answer options. The mental status and emotional state of the subscribers were also assessed by their further personal interviews. The first account was presented with 10,000 followers, the second with 9,100 followers in the age range from 25 to 55 years old. Less than 10% of the followers took part in the examination. However, most of them refused to be surveyed. It was found that the blocking of Instagram was accompanied by a distress of the usual emotional-informational and supportive space – emotional reactions with a high degree of stress response, loss of social recognition, ways of obtaining it, implementation, monetization, up to a failure of adaptation in some content consumers. In the compared groups, differences were found in such indicators as anxiety, fear, anger, apathy and loss of strength. There were also found differences in reaction to future building, which requires further study. The obtained data on the reaction of subscribers of specific accounts can be extrapolated to other accounts and social networks, as reflecting the process of mediatization of social space, including professional space.
familial case of Madelung»s disease, a rare disease with an autosomal dominant inheritance type, is presented. The disease debuts in the fifth decade of life, manifests by lipid metabolism disorders in combination with polymorphic comorbid disorders, and has gender-specific clinical differences.
Introduction. Cerebral microangiopathy is the leading cause of vascular cognitive disorders accompined by dementia in the final stages of the disease. Purpose – to study the spectrum of lacunar syndromes in patients with acute cerebrovascular accidents based on our own observations and provide a description of rare clinical variants of the didorders. Materials and methods. We examined 18 patients (10 men and 8 women) aged 33 to 66 years (mean age 52.33 years) in the acute period of lacunar strokes (LS). We studied the neurological status, the data of laboratory-instrumental, speech therapy and neuropsychological testing. The diagnosis of LS was verified using magnetic resonance imaging. Results. Lacunar strokes were more common in patients of mature age (72.22 %) suffering from arterial hypertension (88.89 %) in combination with obesity (44.44 %); patients with atherosclerosis of the coronary and cerebral arteries (27.78 %), type 2 diabetes mellitus (22.22 %) found to have lacunar stroke less often. The sensorimotor hemisyndrome was found to be prevailed (44.44 %). Other classical lacunar syndromes were detected less frequently: with the same frequency (16.67 %) – isolated hemihypesthesia and «hemiballism / hemichorea», as well as «dysarthria – clumsy hand» (11.11 %). The predominant localization of the lesion is the right hemisphere (88.89 %), the internal capsule (66.67 %), rarely the thalamus (27.78 %). Multiple LS were registered in 27.78 % of cases, including the patients with tandem atherostenosis of the cerebral arteries. Descriptions of two clinical cases of LS are presented. Conclusion. Sensorimotor hemisyndrome dominated in clinical scenario. We also observed more rare disorders – bulbar syndrome with anarthria with bilateral damage to the knee of the internal capsule and hyperkinetic syndrome with myoclonus of the respiratory, vocal and articular apparatus. The right-hemispheric lesion predominated with the localization of foci in the internal capsule, the thalamus suffered rarely. Multiple LS were registered in 27.78 % of cases. LSs have unfavorable prognosis for patients with uncontrolled arterial hypertension combined with tandem stenoses of extra- and intracerebral arteries with cognitive disorders that made it difficult to manage patients. The relevance of LS neuroimaging in overweight patients was noted.
