Garlic is a natural source which has abundant organosulfur constituents. Garlic is divided into water-soluble organosulfur constituents mainly SAC (S-allylcystein), NAC (N-acetylcysteine) and oil soluble organosulfur constituents such as DATS (diallyl trisulfide), DADS (diallyl disulfide), DAS (diallyl sulfide). The aim of this research was to compare the bioactive constituents and antioxidant activity between garlic water-soluble and garlic oil. Garlic water-soluble constituents were identified by Liquid Chromatography-Mass Spectrometry (LC-MS) and five constituents were found, namely N-acetylcysteine (NAC), cysteinyl-alanine, phenol-2-2-benzoxazolyl and two unknown constituents. The GC-MS chromatogram also showed three main constituents present in garlic oil as diallyldisulphide (DADS), diallyltrisulphide (DATS) and D-limonene. Interestingly, garlic water-soluble extract had higher antioxidant activity 70 % ± 0.02 % in comparison with garlic oil 58 % ± 0.07 %. This study conducts a novel preparation of garlic water-soluble for enhancing antioxidant properties on garlic novel preparation.
Microb ial contamination may cause food poisoning and a decrease in food quality. Preservatives such as Citrus senensis sweet orange peel waste can b e used to extend the shelf life of food. The purpose of this study was to measure the potential antioxidant and antib acterial activity of orange peel extract and its application to improve the quality of meatb alls, wet noodles, and tofu. Meatb alls, wet noodles, and tofu were soaked with the extract for 90 minutes prior to storage at room temperature (28±2°C) for 4 days. The results showed that the inhib ition zone of the extract using disc diffusion assay was 17.67±0.58 mm against Escherichia coli, 16±1 mm against Staphylococcus aureus, and 12.67±1.15 mm against Salmonella Typhi. Sweet orange peel extract had an antioxidant activity of 66.41% with total phenol of 2,656.48±55.46 mg GAE/100g. The extract was ab le to reduce total b acteria b etween 0.5 and 1.0 log CFU/g in meatb alls, wet noodles and tofu. The application of the extract on meatb alls, wet noodles and tofu preserved aroma and color attrib ute until 4 th day of storage at room temperature (28±2°C). Decrease of texture attrib utes were ob served starting from 3 rd day of storage at room temperature (28±2°C).
Covid-19 pandemic had limited people’s movement despite the demand to remain productive and maintain good health. Therefore, it was necessary to provide foods which are easy to distribute, durable, nutritious, and easily transformable to increase immunity. This research aims to develop a composite flour (TK) formula with optimal proportion of wheat flour (TT), snakehead fish flour (TIG), pumpkin flour (TBuL), and pumpkin seed flour (TBiL) which then enriched with zinc. The resulting TK is expected to be used as an ingredient for nutritious snacks containing high protein and zinc. The research was conducted in four stages, namely the making of each constituent flour, determining the best formulation with the Response Surface Methodology using Central Composite Design model, characterizing the physicochemical properties of TK and making meatballs, biscuits, and unting-unting from the TK. The three products were tested on experimental animals for their metabolic responses. The optimization of the formula resulted in three optimal formulations, namely formula A, B, and C with the proportion of TT:TIG:TBuL:TBiL respectively as follows 55:20:15:10; 56.65:20:13.35:10; 57.98:20:12.02:10. The most optimal formula of composite flour was formula A with the highest protein (26.12%) and zinc (18.06 mg/kg) content among other formulas. Then, zinc was added into Formula A using microencapsulation, and TK with protein content of 26.74% and zinc of 56.8 mg/kg were obtained. The histopatology observation on experimental animals showed that the three products made from TK did not cause necrosis of the liver or cell infiltration in the kidneys.
Herbal Products of Moringa oleifera was produced by KWT (Farmer Woman’s Group). These product were certified by DINKES (Health Unit Ministry) as PIRT (Pangan Industri Rumah Tangga). These products has been marketed with limited information on the packaging. Based on Indonesian Regulation about Safety Product for Consumen (UU RI No. 8 year 1999), the consumers must be guaranted about safety, comfortability , and security about the product. The Objective of the Education program was to give the right information about the Nutrition Content and Safety Aspect From Moringa Tree. Farmer Women’s Group (KWT) “Sri Rejeki” and Farmer Forest Group (KTH) Bogo Village, Kapas Bojonegoro District was the participant of this program. Methods for the Education program was interactive discussion with a competent and expertised presenter/ trainer. There were two modul program’s book which have been published to improve the knowledge of the partocipant regarding the topics. Result from the questionnaire analysis showed that the knowledge about nutritional content of Moringa oleifera was increased from 77.44 to 88.61 and the knowledge about safety aspect of Moringa oleifera was increased from 37.50 to 69.38. ABSTRAKProduk olahan kelor yang sudah dipasarkan oleh KWT telah mendapatkan sertifikat PIRT oleh DINKES setempat. Informasi produk pada kemasan belum dituliskan batasan penggunaan dalam sehari, serta informasi nilai nutrisinya. Menurut UU RI No. 8 Tahun 1999 tentang Perlindungan Konsumen, konsumen berhak atas keamanan, kenyamanan dan keselamatan dalam mengkonsumsi barang/ jasa. Tujuan kegiatan sosialisasi ini adalah untuk edukasi terkait Kandungan Nutrisi dan Aspek Keamanan Tanaman Kelor. Edukasi diberikan pada ibu-ibu KWT Srirejeki dan Bapak-bapak anggota KTH yang menggeluti usaha dibidang produk olahan kelor, agar lebih memahami nilai nutrisi dan keamanan produk yang mereka pasarkan. Metode yang digunakan untuk peningkatan pengetahuan dengan pemberian materi terkait topik, yang diberikan dengan metode ceramah interaktif oleh narasumer yang kompeten dibidangnya. Pada kegiatan ini dihasilkan dua modul pelatihan yakni Modul Kandungan Nutrisi Tanaman Kelor dan Modul Tinjauan Efektivitas dan Keamanan Tanaman Kelor. Dari hasil penilaian kuesioner menunjukkan tingkat pengetahuan peserta pelatihan meningkat dari nilai rerata 74.44 menjadi 88.61, sedangkan untuk pemahaman terhadap keamanan kelor pengetahuan peserta masih sangat kurang (rerata skor nilai total 37.50) dan di akhir sosialisasi (rerata skor nilai total 69.38).
