Penelitian ini bertujuan untuk mengetahui karakteristik mutu tortila dengan penambahan rumput laut (Eucheuma Cottonii)..Penelitian dilakukan bulan Juni sampai bulan September 2019 di Workshop Pengolahan Poltek Karawang serta Laboratorium Kimia Sekolah Politeknik AUP Jakarta. Penelitian dilakukan dengan eksperimen menggunakan Rancangan Acak Lengkap (RAL) terdiri dari 1 perlakuan yaitu konsentrasi rumput laut yang ditambahkan dengan 4 variabel yaitu konsentrasi A (0%), B (1%), C (1,5%) dan D(2%). dengan ulangan 3 kali. Analisis data dilakukan dengan Anova, apabila hasilnya berbeda nyata dilanjutkan dengan BNJ. Hasil Penelitian menujukkan : Tortilla A: kadar air 3,6%, kadar abu 2,95%, lemak 15,65%, protein 8,4%, dan kadar serat kasar 1,34%. Tortilla B: kadar air 4,4%, kadar abu 3,45%, lemak 19,4%, protein 8,55%, dan kadar serat kasar 1,49%. Tortilla C: kadar air 5,1%, kadar abu 4,15%, lemak 20,7%, protein 8,7%, % dan kadar serat kasar 1,63%. Tortilla D : kadar air 5,6%, kadar abu 4,55%, lemak 23,15%, protein 9,05%, dan kadar serat kasar 1,75%. Perbedaan penambahan rumput laut berpengaruh nyata terhadap hasil uji kadar abu tortilla dan tidak berpengaruh nyata terhadap parameter lainnya
Udang vanamei (Litopenaeus vannamei) merupakan salah satu produk perikanan yang mempunyai nilai ekonomis penting. Produk ini memiliki faktor penentu sebagai komoditas ekspor dalam perdagangan internasional. Untuk itu, diperlukan proses penanganan yang baik di Indonesia. Penelitian ini bertujuan untuk mengetahui penerapan GMP dan SSOP pada proses pengolahan udang kupas mentah beku (peeled deveined). Metode dilakukan dengan observasi dan survei, dengan mengikuti secara langsung seluruh proses penerapan persyaratan kelayakan dasar (GMP, SSOP), mulai dari penerimaan bahan baku hingga pemuatan, dengan melakukan pengujian terhadap mutu (organoleptik, mikrobiologi, antibiotik), pengamatan penerapan rantai dingin, rendemen, dan produktivitas tenaga kerja. Analisa data dilakukan dengan deskriptif. Hasil penelitian menunjukkan bahwa penerapan kelayakan dasar GMP dan SSOP sudah dilakukan dengan baik sesuai SNI No. 3457-2014 tentang udang kupas mentah beku. Hasil pengujian mutu organoleptik bahan baku dan produk akhir adalah 8, uji mikrobiologi berkisar 9 x 103 kol/gr - 2,5 x 103 kol/gr dan not detected untuk hasil uji antibiotik, sesuai dengan SNI. Penerapan rantai dingin telah dilakukan dengan baik dengan suhu udang bahan baku 3º C. Rendemen pada potong kepala dengan dan pengupasan kulit rata-rata 69,8 % dan 81,1 % sesuai dengan standar perusahaan. Produktivitas pada proses pemotongan kepala dan pengupasan adalah 37,1 dan 7,75 kg/jam/orang, sesuai dengan standar perusahaan.

Brown seaweeds have the potential to produce bioactive compounds. Bacteria associated with seaweeds are involved in the production of metabolites. Microbes may be present as a living symbiotic in association with other algae as epiphytes or endophytes. In this study, bacteria isolated from brown seaweed (Turbinaria conoides) were tested for antibacterial activity. A total of 14 bacteria were isolated, of which 6 were isolated from external tissue, while 8 from internal tissue. Results of an antagonistic test revealed that 7 isolates showed inhibitory activity against Staphylococcus aureus and only 1 isolate showed the inhibition against both S. aureus and Escherichia coli. Phenotypic and genotypic analysis showed that the symbiont bacteria was Lactobacillus plantarum.

Grouper fish is an important commodity in Indonesian waters which has bright marketing prospects, both domestic and export. Grouper fish is Indonesia's leading non-oil and gas export commodity, in addition to seaweed, shrimp and tuna. Indonesia is the world's largest export of grouper, especially live grouper exports. This study aims to see the processing of frozen grouper fillets. The method is carried out by observation and survey, by directly following the entire processing process, from receiving raw materials to transportation, by conducting quality testing (organoleptic and microbiological), cold chain observation, yield, labor productivity. Data analysis was done descriptively. The results showed that the processing was carried out properly according to SNI No. 2696: 2013 concerning frozen fish fillets. The results of the organoleptic quality test of raw materials and final products were 8, microbiological tests ranged from 3 × 103 cabbage / gr for the ALT test, <3.0 APM / gr for the E. coli test and negative results for the Salmonella test, according to SNI. The application of cold chain has done well with the raw material temperature of grouper 1.580C. The yields in the filling and tidying process averaged 49.9% and 64.6%, according to company standards. The labor productivity in the filling and tidying process was 97.79 and 107.89 kg / hour / person, according to company standards.
