Moderate water stress tomato cultivated hydroponically in the greenhouse contains high lycopene and very sensitive to storage temperatures. This study aimed to observe the effect of storage temperatures on the lycopene content and color quality parameters of tomato (both moderate water stress and no water stress tomato). The lycopene content of water stress tomato increased with the temperatures higher than 10 °C while no water stress tomato relatively stable or increased slightly. The lightness (L*) value of water stress and no water stress tomato decreased during storage in 10, 15, 25 and 30 °C temperatures. The redness (a*), yellowness (b*), a*/b*, hue (h), and chroma (C*) remained stable after 4 days storage in those temperatures. Storage with temperatures above 15 °C increased the color parameters value of both water stress and no water stress tomato. Moderate water stress treatment increased the redness color and harvesting tomato in ripening stage will only shows lightness (L*) major change during storage.
Penerapan SNI merupakan jaminan kesesuaian produk dengan spesifikasi yang telah ditetapkan. Maluku utara sebagai daerah penghasil pala terbesar di Indonesia, tapi untuk menerapkan SNI biji pala yang ada saat ini yaitu SNI-0006-1993 perlu disesuaikan dengan kondisi saat ini dan perkembangan standar mutu yang diterapkan pasar dalam negeri maupun luar negeri. Dua SNI tersebut perlu dikaji dengan membandingkan standar yang ada dipasar karena biji pala sebagian besar diekspor ke pasar luar negeri. Analisis dilakukan terhadap persyaratan mutu. Hasil kajian ini dapat disimpulkan bahwa tingginya keragaman varietas biji pala yang ada di Maluku utara menyebabkan penerapan mutu SNI terutama untuk mutu CN sulit terpenuhi. Standar pasar yang ada saat ini lebih banyak digunakan sebagai acuan dalam menentukan kelas mutu dan harga biji pala ditingkat petani dan pedagang. Berdasarkan hasil pengujian berat biji pala untuk kualitas mutu 1 ABCD 5 gram-8,33 gram, kualitas mutu 2 RIMPEL (Shrivel) beratnya 4,11 gram-4,99 gram, biji pala dengan berat ≤ 4,11 masuk kedalam kualitas mutu 3 BWP. Kadar air biji pala yang beredar dipasar sudah memenuhi syarat SNI 01-0006-1993, dari hasil pengujian kadar air pada 3 kualitas mutu diperoleh kadar air 10,54% untuk mutu 1 (ABCD), 8,64% untuk mutu 2 (RIMPEL) dan 11,92 % untuk mutu 3 (BWP). Persyaratan mutu SNI untuk kadar air biji pala maksimum adalah 10% maka mutu 1 dan mutu 2 sudah memenuhi syarat SNI. Berdasarkan hasil tersebut SNI biji pala perlu direvisi yang mencakup persyaratan jumlah biji per ½ Kg terhadap produk biji pala yang beredar dipasar. Tofu is one of Indonesian traditional foods that is produced mostly by small medium scale industry. It is indicated by low production scale, inefficient in using production material and energy during the process. Baturetno village in Bantul district is center of tofu industries in Yogyakarta Province and is facing common problem such as lack of knowledge, inefficient using energy, using human labour, and no appropriate technology applied. This study is aimed to apply Life Cycle Assessment (LCA) for evaluating the process, waste and emission released to environment and is focused on Global Warming Potential (GWP). The LCA gate-to-gate was applied in a small-scale tofu industry, which had one worker, a production capacity 50 kg soybean/day, 6 working stations and used wood and electricity. For producing 1 kg fresh tofu it was needed energy from human, fuel, wood and electricity were needed for producing 1 kg fresh tofu 1.5269 MJ/kg and produced pollutant contributed as global warming potential of CO2, NOx, CO and CH4 totally 0.1766 kg CO2-equivalent.
