The aim of this paper is to analyse the chemical compositional and nutritional profiles of a two number of white lupine cultivars (Lupinus albus, cultivars Amiga and Energy) suited to the pedoclimatic conditions in Romania, collected in the year 2015. No significant differences were observed among lupine cultivars in their dry matter (DM), crude ash or alkaloid contents. The highest protein content (36.4�1.1% of DM) and crude fat (10.1�1.2% of DM) was found in seeds from lupines belonging to cv. Amiga, while the highest crude fibre content (15.2�1.7% of DM) was found in cv. Energy. Both varieties examined were characterised by a shortage of methionine and lysine, but lysine deficiency was higher in cv. Energy. Amiga cultivar was found to be a nutritionally more valuable crop than cv. Energy by the standards of nutrition for mature human and animals (chicken broilers and growing pigs). Amiga lupine was characterised by a higher essential amino acid index (EAAI) as well as chemical score (CS) of lysine, and the high nutritional index (NI) and biological value (BV) of protein as compared to cv. Energy. The white lupine seeds examined can serve as a source of good quality food protein for adult humans, meet the requirement for exogenous amino acids (EAA) and Lys in chicken broilers and to a lesser degree in the case of growing pigs, according to the standards of nutrition used. Fatty acid (FA) composition showed that oleic acid (C18:1 n-9) was the major fatty acid, followed by linoleic (C18:2 n-6) and linolenic (C18:3 n-3) acids. Apart from the highest level of polyunsaturated fatty acids (PUFA) the seed oil of Amiga cultivar showed and the largest content of linolenic acid (n-3) and the most favourable report n-3/n-6 FA.
The growing demand for food worldwide, along with the increasing need for animal protein, lead to the identification of other sources of highest quality meat, then the conventional ones, such as it is the hare meat. The aim of this study was to characterize the sensorial, physico-chemical and nutritional traits of hare meat (Lepus europaeus Pallas) issued from hunting funds in North-East of Romania. The biological material consisted of 79 hares (34 males and 45 females), slaughtered by shooting at the age of about 18 months, during the regular hunting season (1 November to 31 January). Different muscle groups were collected: Longissimus dorsi (LD), Triceps brachi (TB) and Semimembranosus (SM). For physicochemical determinations (measurement of the pH at 24 and 48 hours, of water, proteins, lipids, fatty acids and of ash) were analyzed 237 samples (79 for each muscle group). The results obtained from the sensory analysis are relatively close as a score for the three muscle groups studied. The pH value was higher for TB muscles. The highest amount of protein was observed for LD muscles collected from males (21.65%), while the richest in lipids were the females TB muscles (2.38%). The fatty acids levels were predominantly higher for males (for the most of the assessed fatty acids). Very favorable ratio of PUFA:SFA was identified in LD muscles (1.695 for males and 1.531 for females), in SM muscles (1.679 for males and 1.527 for females), and in TB muscles, as well (1.885 for males and 1.820 for females). The variance analysis revealed insignificant gender related differences for the three muscle groups, concerning the sensorial traits, the pH level, ash content and energy value. However, in proteins, lipids and water levels, there were observed highly significant gender related differences in TB muscles. Also, for some fatty acids, significant statistical differences were found between genders, in all three muscle groups.
The aim of this paper is to study the chemical composition of a green fodder used in laying hens feeding raised in ecological system; organic fodder being an important condition to obtain organic eggs for consumption. In order to evaluate the chemical composition variations of the green fodder throughout the year, there were taken plants samples in three different vegetation stages (May, September and October). To each period, were done 5 determinations for the following indicators: dry matter - DM (%), ash - Ash (%), crude protein - CP (%), ether extract - EE (%), crude fiber -CF(%), nitrogen free extract - (NFE%) calcium � Ca(%), phosphorus - P(%), magnesium - Mg (%), natrium -Na(%). And also, were analyzed the relevant indexes for the organic production: lead -Pb (mg/kg DM), cadmium - Cd (mg/kg DM), cooper -Cu (mg/kg DM), zinc - Zn (mg/kg DM) nitrites (ppm), nitrates (ppm), pesticides. After analysis, it was noticed that dry matter, minerals, organic matter and protein content varied very significantly between the first period and the third (p �0.001), while the fat content, crude fiber and nitrogen free extract did not register significant differences (p �0.05). Regarding the minerals elements analyzed, P and Mg differed significantly distinctly between the first and the last analyzed period. The content of green fodder in Pb, Cd, Cu and Zn was below the limits allowed by current legislation. The analyses for pesticides have highlighted the lack of them in the fodder. The quality parameters of the analyzed green fodder, expressed through levels of pollutants such as heavy metals, nitrites, nitrates, pesticides, allow us to notify that the green fodders achieve the conditions necessary for organic production.
Meat science has always been most interested in practical applications and macroscopic effects of internal/external factors in relation to water holding capacity (WHC). Research has been motivated by technological and sensory aspects, both finally linked to economic benefits. The objective of this study was to assess the effects of gender and different muscle groups from rabbits on WHC of their meat. Determining WHC was carried out by compression of the meat over filter paper between two plates. The biological material was collected from 56 Belgian Giant breed rabbits (25 males and 31 females). Aged 11-12 months, the rabbits had an average body weight of 11.5 kg. Measurements were performed on the muscles Longissimus dorsi (LD), Psoas major (PM) and Semimembranosus (SM) 24 hours after slaughter. The percentage of WHC was calculated as ratio (per cent) of weight of released water to intact meat. WHC for females, in LD, had an average value of 8%, in PM it had an average value of 9.31%, and in SM it had an average value of 12.91%. For males, WHC in LD was 7.6%, in PM 8.23% and in SM 11.43%. The average value for WHC was higher for females than for males. Regarding the statistical significance of differences by gender, distinct significant differences for SM and very significant differences for PM were recorded. For PM, a higher average value of WHC is probably due to the smaller diameter of muscle fibres and also to water higher percentage of them.
