Mortadellas manufactured using Caiman yacare meat (70%) and pork fat (30%) were reformulated by substituting pork fat with increasing amounts of soybean oil (25%, 50%, and 100%) and evaluated 7, 30, and 60 days post-manufacture. The substitutions resulted in an increase in fat content and in the percentage of polyunsaturated fatty acids (total PUFA; 18:2 n-6 and 18:3 n-3), and a reduction in saturated fatty acids (total SFA; 14:0 and 16:0). These alterations reduced (P<0.01) the indices of atherogenicity and thrombogenicity by 4- to 5-fold in the formulation with 100% soybean oil compared to the original formulation. The levels of TBARS obtained at day 7 were positively correlated (P<0.01) with 18:2 n-6 and 18:3 n-3 (r=0.83 and 0.84, respectively) and negatively correlated with 17:0 and 17:1 (r=-0.91 and -0.89, respectively). All formulations received favourable overall acceptability by the sensory panel.
Five brands of Brazilian chocolate milk were subjected to physicochemical and acceptability analysis. The moisture content, fat content, pH and soluble solids content varied between 78.35 and 84.27 g/100 mL, 1.68 and 3.08 g/100 mL, 7.11 and 7.44, 14.0 and 19.0° Brix, respectively, while the ash contents and % lactic acid equivalents were similar. Four of the tested brands had acceptable scores in all attributes; however, one had lower acceptability scores and lower values for luminosity, chromaticity, b* and hue angle, which are potential indicators of the sensory quality. Strong chocolate aroma, strong chocolate flavour, strong brown colour, brightness and sandiness may be used as indicators of low acceptability for chocolate milk.
RESUMO -Foram estudadas quatro fontes lipídicas (óleo de soja, óleo de canola, azeite de oliva e gordura suína) em dois níveis na dieta (7 e 14%), verificando a influência do consumo dessas fontes lipídicas sobre algumas frações lipídicas do sangue de ratos. Assim, oito grupos de ratos machos da linhagem Wistar (Rattus norvegicus) foram alimentados ad libitum por 56 dias com oito dietas distintas contendo as fontes e níveis citados de lipídios. As dosagens de colesterol total e triacilgliceróis no soro foram realizadas pelo método colo-rimétrico/enzimático utilizando "kit" comercial específico. O colesterol em HDL foi determinado por precipitação dos quilomícrons, VLDL e LDL, utilizando também "kit" específico. O aumento de lipídios na dieta para 14% elevou os valores de colesterol total, HDLcolesterol e LDL+VLDL-colesterol séricos, quando a fonte foi a gordura suína. Com 14% de lipídios na dieta, os menores valores de triacilgliceróis séricos foram observados nas fontes lipídicas óleo de soja e canola, com valores de 76,09 e 84,42 mg/dL, respectivamente.
