Within the fi eld of green supply chain management (GSCM), an interest in supply chain cooperation to create sustainable competitive advantage, i.e. the collaborative paradigm, has made researchers turn their attention to information related aspects of the supply chain. This study contributes to an understanding of a suboptimal use of environmental information, which is critical for all collaborative efforts aiming at sustainable competitive advantage. The aim of this article is to describe the use of environmental information at different stages of the Swedish food supply chain. The results from this case study of the Swedish food supply chain indicate that environmental information is perceived and used differently by purchasers in the supply chain depending on where (in the supply chain) they are situated in relation to other chain actors. The main contribution of this study is the suggestion of a stage-dependent connection between perceived environmental cost and perceived environmentally informed consumer demand, which are barriers to GSCM practice discussed in recent GSCM literature. The missing link between information sharing and (environmental) performance of supply chains is explained as distance to endconsumer in terms of supply chain stages. Implications for GSCM practice and theory are discussed.
The purpose of this research is to explore extraordinary experiences of food tourists and to develop a theory of surprise in relation to a typology of food cultural capital. We draw on phenomenological interviews with sixteen food tourists. We found that food tourists experienced surprise in different ways, depending on their food cultural capital. Food tourists who possessed a high level of cultural capital were surprised by the simplicity or complexity of the experience while those possessing a low level of cultural capital were surprised by the genuinity of the experience. Thus, we make an important theoretical contribution here as we learn that the resources food tourists possessed in the form of cultural capital conditioned the ways in which they conceived an extraordinary experience. More so, using the cultural capital perspective, we have also demonstrated the role of social context in contributing to creating an extraordinary experience.
This article investigates the outcomes of mainstream coffee voluntary sustainability standards for high-biodiversity coffee diversification. By viewing voluntary sustainability standards certifications as performative marketing tools, we address the question of how such certification schemes affect coffee value creation based on unique biodiversity conservation properties in coffee farming. To date, the voluntary sustainability standards literature has primarily approached biodiversity conservation in coffee farming in the context of financial remuneration to coffee farmers. The performative analysis of voluntary sustainability standards certification undertaken in this paper, in which such certifications are analyzed in terms of their effect on mutually reinforcing representational, normalizing and exchange practices, provides an understanding of coffee diversification potential as dependent on standard criteria and voluntary sustainability standards certification as branding tools. We draw on a case of high-biodiversity, shade-grown coffee-farming practice in Kodagu, South-West India, which represents one of the world’s biodiversity “hotspots”.
