This paper reports a study addressing the issue of enriching pressed sugar in order to improve its biological value. As additives to sugar, the use of derivative products of processing wild berries Hippophaerhamnoides L., Viburnumopulus, Sambucusnigra, Sorbusaucuparia is suggested. The technology of processing wild berries includes their preliminary freezing, partial dehydration by osmotic dehydration, and subsequent drying. The resulting osmotic solution is proposed to be used to moisten sugar before its pressing and drying. An important practical aspect of this technological advancement is the possibility to move away from seasonality at sugar factories. Since it is advisable to process wild berries at the end of the beet processing season. To implement the proposed technology, one can use some available equipment. The chromatographic method was applied to analyze the amino acid spectrum of derivative products from processing wild berries; 17 amino acids were identified in their composition, including essential ones. The highest concentration of amino acids (55.47 mg/100 g) was found in the derivative product of Sambucusnigra processing. The least amount of amino acids passes into the product of processing Viburnumopulus (3.63 mg/100 g). The experiment showed that adding to sugar 10 % of the derivatives of the processed wild berries Hippophaerhamnoides L., Viburnumopulus, Sambucusnigra, Sorbusaucuparia has a positive effect on the organoleptic indicators of the finished product. The highest rating for all organoleptic indicators (appearance, taste and smell, purity of the solution) was given to sugar enriched with a derivative of the Hippophaerhamnoides processing product. It contained only 16 amino acids in the amount of 16.14 mg/100 g. Of the found amino acids, the highest concentration was demonstrated by serine (7.43 mg/100 g). The sugar with the addition of the solution after partial dehydration of Viburnumopulus revealed a slight characteristic smell of the additive. In the sugar with the addition of the derivative product of processing Sorbusaucuparia, a pleasant bitterness was felt, indicating the transition of sorbic acid from the fruit to osmotic solution
Цукор має важливе значення для життєдіяльності людини. Вживаючи цукор, організм людини одержує третину енергії для нормального метаболізму. Цукор є стратегічно важливим продуктом, оскільки він є сировиною для виробництва багатьох харчових продуктів. Разом з тим, надмірне вживання цукру є шкідливим. Основною сировиною для виробництва цукру в Україні є цукрові буряки. Сахароза, яка є основною складовою бурякового цукру (99,6-99,9 %), не містить біологічно активних компонентів. Крім того, асортимент цукру в Україні досить обмежений. Перспективність цукрової галузі, відповідно до агрокліматичного потенціалу, а також за умови розширення асортименту збагаченого цукру, є підґрунтям для поступового розвитку галузі та аграрного комплексу в цілому. Метою статті є аналітичне дослідження асортименту цукру у світі та в Україні, пошук способів його розширення. Методологічною основою дослідження є аналіз асортименту цукру та систематизація відомостей про види цукру. У статті проаналізовано асортимент цукру в світі та Україні залежно від видів сировини та способів його збагачення. Наукова новизна полягає в тому, що вивчено світовий ринок виробництва цукру, як традиційного, так і збагаченого; встановлено, що спосіб збагачення цукру похідними продуктами переробки дикорослих ягід є унікальним та перспективним. Висновки. За аналізом літературних джерел встановлено, що найкращі споживчі властивості має тростинний цукор, серед різновидів якого в якості сировини для виробництва цукровмісних продуктів рекомендується використовувати коричневий (неочищенний) цукор. Буряковий цукор широко використовується як продукт (підсолоджувач) та натуральний консервант. Виробляється широкий асортимент цукру залежно від розмірів кристалів. Розширення асортименту цукру регіональними видами сировини є на сьогодні актуальною темою. В Україні виробляють лише буряковий цукор-пісок, пресований та цукрову пудру. Наразі недостатній асортимент збагаченого цукру вітчизняного виробництва, існує лише декілька виробників з цього напрямку. Значно розширити асортимент цукру з підвищеною біологічною цінністю та вирішити проблему сезонності на бурякоцукрових заводах може спосіб збагачення цукру похідними продуктами переробки дикорослих ягід.
In the process of any food production, it is important not only to obtain a high quality product, but also to minimize industrial waste, reduce energy costs for the process. Recently, buyers are also paying special attention to the biological value, the popularity of organic and natural products is growing. The search for new types of non-traditional raw materials and the choice of a rational way of processing it is an important task for scientists and manufacturers. The subject of the study was the viburnum fruits (Viburnum opulus). The object is the process of osmotic dehydration. The purpose of the study is to substantiate the effectiveness of the method of processing Viburnum opulus fruits by the method of osmotic dehydration. The process of processing viburnum fruits provides for mandatory pre-freezing, defrosting, osmotic dehydration and drying. A method was developed for waste-free processing of viburnum fruits using the process of osmotic dehydration. Products of viburnum processing (osmotic solution and powders) were studied. Analysis of the mineral composition of powders of their derivatives from the processing of viburnum showed the highest content of potassium (5.74 %). In addition, vitamin C was found in the products of viburnum processing: in powders – 8.28 mg/100 g, in an osmotic solution − 1.12 mg/100 ml. Given that wild berries were used for the study, a study of powders for the presence of microorganisms and heavy metals was carried out. Mesophilic aerobic, facultative anaerobic microorganisms, yeasts and molds were not detected. The content of heavy metals is less than 10 ppm Pb. Thus, viburnum fruits are safe raw materials. When using osmotic dehydration, their biological value and organoleptic properties are preserved.
Carbohydrates play an important role in nutrition, especially sugar, it is an integral part of many products, both ready and raw. The norm of sugar consumption per day is 25 g (no more than 5 spoons per day). The issue of increasing the biological value of sugar is relevant, as it plays an important role in human nutrition. Almost no one is engaged in the production of enriched sugar in Ukraine, only a few developments of sugar with functional properties are presented. But this topic is quite relevant in the world, scientists are developing enrichment schemes with regional raw materials. The purpose of our research is to develop a technology for obtaining enriched sugar by using wild berries of regional importance, using the osmotic dehydration method. During the study, standard organoleptic and microbiological methods of functional sugar assessment were used. The article presents a technological scheme for the production of enriched sugar, determined the amount of osmotic syrup that should be used to obtain lump sugar to give it positive organoleptic indicators. Microbiological indicators were determined during long-term storage for 6 months. The presence of biologically active substances in sugar increases its chemical composition. Enriched sugar contains not only carbohydrates, but also amino acids, coloring and flavoring substances. According to organoleptic indicators, sea buckthorn sugar received the highest rating. All four types of enriched sugar have a high storage capacity, the development of harmful microflora is not observed after 6 months of storage. The results of the conducted research showed that the developed technology for the production of enriched sugar can be used at the production facilities of operating sugar factories. But on the condition of additional installation of the apparatus for carrying out osmotic dehydration. Functional sugar can be used as a sweetener for tea, coffee, water; and sweet connoisseurs can use it instead of candies.
