The study was conducted using a randomized block design with a s<br />main plot which consists of: 1) 10° C and 2) ambient temperature. Kulit buah manggis (KBM) merupakan bagian terbesar dari buah manggis (Garcinia mangostana L.) yang dikategorikan sebagai limbah. Studi fitokimia menunjukkan bahwa senyawa antioksidan dalam KBM, terutama xanthone, antosianin dan kelompok senyawa fenoliklainnya memiliki sifat fungsional dan manfaat untuk kesehatan seperti antidiabetes, antikanker, antiinflamasi, meningkatkan kekebalan tubuh, antibakteri, antifungi, antiplasmodial, dan sebagainya. Berbagai produk olahan berbasis KBM segar sudah berkembangkan di pasaran, seperti jus, konsentrat dan produk lainnya. Pada tahun 2009 telah dihasilkan produk bubuk KBM instan dari ekstrak tepung KBM dengan dengan teknologi enkapsulasi. Tujuan dari penelitian ini untuk mengetahui sifat antioksidan dari produk bubuk KBM instan dan mengaplikasikannya pada pembuatan minuman fungsional berkarbonasi. Parameter sifat antioksidan yang dianalisismeliputi senyawa alfa-mangostin (xanthone), antosianin dan total fenolik serta kapasitas antioksidan dengan metode DPPH. Aplikasi bubuk KBM instan untuk minuman instan berkarbonasi pada konsentrasi penambahan bubuk KBM instan 10% (Formula A), 15% (Formula B), dan 20% (Formula C) dengan ingridien aspartam, sorbitol, asam sitrat, asam malat, natrium bikarbonat dan flavor. Uji organoleptiktingkat kesukaan produk menggunakan metode uji skalardari 0 sampai 10 cm dengan 30 orang panelis. Datadianalisissecara statistik dengan uji ANOVA dan uji lanjut Duncan's (p<0,05). Hasil penelitian menunjukkan bahwa bubuk KBM instan mengandung kadar alfa-mangostin sebesar 0,59 mg/g, antosianin sebanyak 1,13mg/g, dan kadar fenolik sebesar 8,49 mg/g per satuan bobot sampel kering,sedangkan kapasitas antioksidannya sebesar 19,72 mg/g AEAC. Formula minuman KBM instan yang lebih disukai panelis adalah Formula A dan B dibandingkan Formula C yangsecara statistik berbeda nyatapada semua parameter uji. Berdasarkan efisiensi biaya produksi maka formula terpilih adalah Formula A dengan komposisi bubuk KBM instan 10%, aspartam 0,06%, natrium bikarbonat 40%, asam sitrat 30%, asam malat 8,6%, PEG 0,03%, dan sorbitol 11,31%. Pericarp is the largest part of the mangosteen fruit (Garcinia mangostana L.) that is usually unutilised. Phytochemical studies showed that antioxidants in mangosteen pericarp, particularly xanthone, anthocyanin and other phenolic compounds have functional properties and benefits for health such as antidiabetic, anticancer, antiinflammatory, hepatoprotective, immuno-modulation, antibacterial, antifungal, antiplasmodial, etc. Many products of fresh mangosteen pericarp have been developed and availabe in the market such as juice, concentrate, etc. Mangosteen pericarp instant powder has been developed from extract of mangosteen pericarp powder using encapsulation technology. Gedong mango (Mangifera indica L.) is a tropical fruit that has the potential for export. But, the fruit of the mango is hosted by fruit fly. Fruit fly pests of mango export has been restrained by the very strict quarantine regulation. Therefore, it need a treatment that can annihilate the fruit fly. Irradiation technique has been one of the quarantine treatment that being attention, in order to disinfested pest attack. This research aims to study the effect of irradiation on mortality of fruit fly species Bactocera papayae (oriental fruitfly) on gedong mango, and to study the effect of irradiation dose and storage temperature on the physiology of the nature and quality of mangoes gedong. The results showed the mortality test results for B. papayae towards the dose 0.75 kGy reached until 100%. The next level was to test the mango fruit fly which considered infested naturally from the field. The dose given were 0:25 kGy, 0.5 kGy, 0.75 kGy and control. The results showed that in the control treatment founded that fruit flies growth from the day 9 th to day 24 th days of storage. 0.25 kGy dose and 0.5 kGy dose given were still found larva growth until the day 24 th days of storage. From the test results of mortality at the dose of 0.75 kGy was able to annihilate fruit fly mortality reaches until 100%, but when applied to the fruit which has considered infested in the field were still found larvae growth until the 21 st days of storage. Irradiation dose of 0.75 kGy can suppress the respiration rate, and weight losses during storage. With the irradiation dose can affected the quality of gedong mango such as vitamin C, total acid, Total Soluble Solid (TSS), and moisture content of gedong mango.
Kondisi penyimpanan menjadi kata kunci untuk meningkatkan daya simpan umbi kentang GM-05 dengan mutu segar yang terjaga.<br />Kentang segar GM-05 dalam penelitian ini diperoleh dari Kebun Percobaan Balai Penelitian Sayuran, Lembang dan dipanen pada umur<br />90 Hari Setelah Tanam (HST). Umbi kentang dengan bobot masing-masing 30 kg dikemas dalam karung rajut, disimpan pada kondisi<br />(1) ruangan gelap, (2) ruangan dengan pencahayaan 100-500 lux/lilin, dan (3) dihamparkan sebagai kontrol. Penyimpanan dilakukan<br />pada suhu ambient, 20, dan 10oC. Pengamatan dilakukan setiap 2 (dua) minggu sekali selama 3 bulan penyimpanan. Parameter yang<br />diamati meliputi: susut bobot, kadar air, kadar protein, kadar karbohidrat, kadar lemak, kadar amilosa, kadar abu, dan tekstur. Rancangan<br />percobaan menggunakan rancangan acak lengkap tersarang dengan ulangan tiga kali dan signifikansi beda nyata terkecil pada taraf<br />5%. Hasil penelitian menunjukkan bahwa penyimpanan dalam ruang gelap maupun yang dengan pencahayaan 100-500 lux/lilin suhu<br />10 oC memberikan susut bobot dan laju penurunan kadar air terendah dibandingkan perlakuan lainnya. Kadar karbohidrat, kadar abu,<br />dan tekstur tidak terpengaruh dengan semua perlakuan penyimpanan. Penurunan kadar lemak dan amilosa umbi kentang melambat<br />hingga masing-masing sebesar 0,14% dan 4,42% terjadi pada penyimpanan dalam ruang gelap maupun yang dengan pencahayaan pada<br />suhu 10 oC. Kadar protein meningkat hingga pada kisaran 1,51%. Penyimpanan suhu 10oC dengan kondisi gelap ataupun pencahayaan<br />100-500 lux/lilin merupakan metode penyimpanan kentang GM-05 terbaik karena mampu mempertahankan mutu dan kesegarannya.
