-The objective of this study was to determine consumers understanding of beef traceability, identifying how consumers value this meat and traceability elements to be presented on retail shelves. The method used in this study was a survey through the internet applying the Sphinx software. The sample consisted of 417 consumers, mostly living in Porto Alegre, Brazil. Consumers are aware of certified beef, consider it important, but this is not a demand. As to traced beef, most consumers (62.4%) are in favor of mandatory traceability of beef cattle in Brazil, but 86.6% disagree with the destination of traced beef only to the foreign market. The majority of people are willing to pay more for traced beef and consider traceability a market opportunity, used as a differentiating tool.

Nesse sentido, este trabalho identificou a percepção dos consumidores brasileiros com relação às indicações geográficas e sua disposição em pagar por esse atributo. Como método, realizou-se uma survey utilizando-se o software Sphinx, via internet, com 272 consumidores de carne bovina. Constatou-se que a percepção do consumidor sobre as indicações geográficas em carnes é, de maneira geral, positiva, sendo este atributo reconhecido como um indicador de qualidade. Os consumidores entrevistados acreditam que essas carnes oferecem maior segurança alimentar e são mais confiáveis que o produto sem a indicação de origem geográfica, sendo possível agregar valor em função de tais diferenciais. A crescente preocupação com a segurança do alimento criou mercados promissores para produtos certificados. Partindo desta premissa o estudo teve por objetivo – fundamentado nas teorias de tomada de decisão e da informação – apresentar e discutir as possibilidades de adequação dos produtores de carne bovina no Brasil às novas exigências como a rastreabilidade, incluindo a transmissão da informação deste processo aos consumidores. Os resultados demonstram a complexidade envolvida na tomada de decisão e os diversos fatores (econômicos e não econômicos) que interferem nessas decisões, haja vista que os produtores sofrem influências internas e externas, referentes ao mercado e ao sistema produtivo.
-The complexity of the consumers' behavior has taken the food industry to a new level of dynamism. Therefore, understanding the factors that influence this behavior is decisive for the differentiation of products to niche markets and even to adjust the supply according to consumers' expectancy. This article proposes a conceptual model to identify the factors influencing beef consumption in Brazil. The methodological approach was characterized by a systematic review through a synthesis of research related directly to this topic. Therefore, 76 papers published during the 2000-2014 period, including official documents (statistics), full research papers, abstracts, proceedings, and reports, were selected. Four main factors were related to influences in consumer behavior and/or directly in beef consumption: sociocultural, economic, health/food, and environmental. Among these dimensions, there was an emphasis on recent publications related to health/food and the environment. The compilation and analysis of these papers enabled the conception of the proposed model and suggests the consideration of four main dimensions in beef consumption.
