-The objective of this study was to characterize the body composition and dietary intake of adolescents from public schools in Blumenau, Santa Catarina. A total of 268 students aged 12 to 16 years were selected by random non-probability sampling. Anthropometric measures including weight, height, waist circumference, and skinfold thickness were collected using pre-established protocols to estimate nutritional status and body composition. Dietary intake was evaluated using a food frequency questionnaire. Descriptive analysis, frequency analysis, and the Student t-test were used (p<0.05). The results showed that 57% of the subjects were eutrophic; of these 38% presented adequate fat percentage. The diet of the adolescents was characterized by high energy intake (>2493.5 kcal), with the distribution of macronutrients being in accordance with current recommendations. However, 84% of the adolescents consumed excess saturated fatty acids (>10%) and 46% consumed excess cholesterol (>300). Comparison of dietary intake between genders showed a significant difference for protein (t=2.234, p<0.026), vitamin C (t=2.128; p<0.034), iron (t=2.654; p<0.008), and calcium (t=2.239; p<0.026). In conclusion, the results indicate the need to better understand and evaluate food intake in adolescents in order to develop intervention strategies. Introduction. The assessment tools in dietary habits need to be validated considering the specificities of the culturally determined eating habits of the population groups. Objective. To present a methodology to adapt an instrument for assessing the pattern of food intake -the food frequency questionnaire (FFQ)for population of the municipality of Pomerode, SC, Brazil. Methodology. A qualitative approach using focus groups as a technique. From the exploration, coding and data analysis of the material collected, 21 foods were added and 17 were excluded from the starting FFQ, resulting in 33.33% of changes. Considerations. The use of focus groups proved to be an appropriate technique for the adaptation of the food frequency questionnaire, resulting in food inclusions and exclusions identified by the participants themselves in their sociocultural context, qualifying the preceding step for validation and reproducibility, so that from their results, correct and useful dietary information for subsequent inferences can be obtained. ABSTRACT 34 ADAPTAÇÃO DE UM INQUÉRITO ALIMENTAR 35 Rev. Aten. Saúde, São Caetano do Sul, v. 14, n. 50, p. 34-41, out./dez., 2016
Objective This study evaluated reproducibility, relative validity, using a 24-hour recall questionnaire as a reference standard, and estimated calibration factors for a food frequency questionnaire adapted for use with German descendants living in Brazil. Methods The target population consisted of 50 volunteers, of both genders, aged over 20 years, living in a German colonization city in southern Brazil. The food frequency questionnaire was applied twice, in the first and third months of the investigation. During this period, three 24-hour recalls were applied, with an interval of one month between them. Reproducibility was estimated by the intraclass correlation coefficient. Validity was tested by the intraclass correlation coefficient, weighted kappa test and Bland-Altman method. Calibration factors were estimated using linear regression. Results Among the food frequency questionnaires, there was a strong correlation for energy and most of the nutrients corrected for energy. There was a weak correlation between a food frequency questionnaire and a 24-hour dietary recall. However, the exact concordance in the categorization in tertiles among the instruments ranged from 28% (vitamin A) to 52% (fiber and potassium). Gross values of the food frequency questionnaire were reduced with the calibration and approached the consumption data estimated by the 24-hour dietary recall. Conclusions The food frequency questionnaire showed good reproducibility, however, weak correlation with the 24-hour dietary recall. The calibration of the data obtained by the food frequency questionnaire brought them closer to the reference method.
