Indonesia has the potential for sago around 50% of the world sago production but has not been used optimally. Technologically, the process of making liquid sugar from sago starch has been developed. Therefore, further research to improve the color quality of liquid sugar is needed. The research objective is to conduct a technical study of liquid sugar production process made from raw sago starch by doing purification treatment using activated charcoal and ion-exchange resin. The liquid sugar production process of raw sagu starch using hydrolysis method is in the condition of the ratio of starch to water is 1:4, the liquidation process is at the temperature of 90°C for 90 minutes with the addition of enzyme α-amylase 1.2 mL kg−1 of starch with pH of 5. Saccharification process is at the temperature of 50 °C for 72 hours with the addition of enzyme glucoamylase 1.2 mL kg−1 starch with pH of 4.5. Purification by ion-exchange resin and evaporation by a vacuum evaporator are at 80° C for 90 minutes with pressure of 0.4 atm. Technically, the technology of liquid sugar production process using the enzymatic hydrolysis method could be developed for the pilot plant and industrial scale.
XYZ adalah industri manufaktur yang memproduksi air minum dalam kemasan (AMDK). Tahapan proses produksi filling cup sangat rentan terjadi kesalahan yang mengakibatkan cacat produk, seperti: proses seal kurang baik sehingga berdampak pada tampilan kemasan, proses pengepresan tidak sesuai sehingga air berkurang, perbedaan jumlah air setiap isian cup, serta terjadinya cup ganda. Evaluasi dan rancangan perbaikan proses diperlukan untuk menghindari dan mengurangi cacat produk serta meminimalisasi biaya inspeksi produk. Metode define, measure, analyze, improve, dan control (DMAIC) adalah salah satu metode yang mampu menjaga, memperbaiki, dan mempertahankan kualitas produk terutama untuk mencapai peningkatan kualitas menuju zero defect. Berdasarkan penelitian yang dilakukan didapat hasil bahwa persentasi jenis cacat tertinggi terjadi pada cacat seal miring dengan persentasi 31% dengan jumlah kecacatan sebanyak 1.021 cup dan terendah terjadi pada cacat cup ganda dengan persentasi 17% dengan jumlah kecacatan 555 cup. Perhitungan nilai DPMO sebesar 1100 menunjukkan bahwa dari satu juta kesempatan akan terdapat 1100 kemungkinan cacat produk. Hasil identifikasi masalah menunjukkan sumber cacat produk berasal dari faktor mesin dan manusia sehingga industri perlu melakukan evaluasi terhadap perawatan mesin dan kinerja operator. Berdasarkan hal tersebut maka PT. XYZ berada di tingkat kapabilitas sigma proses level 4, yaitu di antara rata-rata industri Indonesia dan USA.
The objective of this research was to analyse the feasibility of processing sago starch into liquid sugar product with enzymatic hydrolysis method on the pilot plant scale. Optimization of the production process is carried out by enzymatic hydrolysis with the conditions of the ratio of starch and water is 1: 4, the process of liquidation at 90°C for 90 minutes with the addition of the enzyme α-amylase 1.2 mL kg-1 at pH conditions of 5. Saccharification process with the addition of the enzyme glucoamylase 1.2 mL kg-1 starch at pH 4.5 and temperature 50°C for 72 hours, purification with an ion exchange resin and evaporation with a vacuum evaporator at a pressure of 0.4 atm at 80°C for 90 minutes. Financial analysis was based on the prevailing price in ten years showed that the processing sago starch into liquid sugar product with enzymatic hydrolysis method is viable and profitable as shown by BCR 1.16, NPV of Rp 58,754,955.64, PBP 2 years 11 months, and IRR 34.73%.
Abstrak : Revolusi Industri 4.0 mempengaruhi cara produksi industri untuk lebih memperhatikan efektivitas dan tingkat produksi efisiensi. Produk cacat terjadi karena produk tidak memenuhi standar dan menunjukkan ketidakefisienan proses produksi. Tingginya produsk cacat akan meningkatkan biaya proses produksi yang akan mengurangi keuntungan perusahaan. Data produksi dari Agustus hingga September 2017 pada PT. XYZ menunjukkan peningkatan produk cacat dan berdasarkan data produksi untuk 5 line yang beroperasi, diketahui bahwa produk dengan produk cacat tertinggi adalah line 2 pada bulan september yaitu sebanyak 398 produk cacat dari 3120 produk sampling. Analisis Peta Kendali P menunjukkan bahwa produk yang ditolak masih terkendali. Berdasarkan Root Cause Analysis (RCA) diketahui bahwa penyebab tingginya produk cacat pada line 2 di bulan September adalah bahan baku yang sudah lama dan kurangnya perawatan mesin produksi sehinga kinerja mesin tidak maksimal. Bberdasarkan hasil analisis diketahui bahwa membuat standar operasional prosedur tentang pemeliharaan mesin produksi menjadi tindakan mendesak yang saat ini perlu dilakukan oleh PT. XYZ
Developing hard candy as a functional food with antioxidants and antibacterial properties derived from natural ingredients will do. By analyzing the formulation of innovations and analysis of the financial viability of hard candy products with the addition of gambir catechins, it is expected to provide information to stakeholders related to the development of hard candy innovation products with the addition of gambir catechins (Uncaria gambir Roxb.). The results of the analysis of organoleptic tests, obtaining formulas 17, 8, 18, 4, 7 hard candy had the rating respondents liked very much (4-5). Then conduct a quality test based on SNI hard candy 3547.1:2008 on products that have the criteria of organoleptic test results. Results from SNI hard candy test 3547.1:2008, the product met the standard requirements of SNI 3547.1:2008 products. When compared to hard candy products on the market with an average selling price of around Rp. 333.33, the hard candy products in this study can compete, especially strawberry variants. On a production scale of at least, 10 kg of hard candy HPP can compete with other products, where the hard candy in this study has a high added value antioxidant and has antibacterial properties useful for the health of consumers.
