During the 2017 field season, our team cleaned and documented six of the bakeries in Volubilis. The primary goal of this fieldwork was to provide the first detailed study of the interior operations of the city’s commercial bakeries, documenting the various technologies and attributes within the workshops. Framed in terms of operational sequences, the processes comprising the production of bread are associated with the various spaces within workshops and the relationships between production and the built environs around each workshop. The morphologies of the different technologies are also detailed to begin exploring cross-craft interactions as part of future work at the site.
