The present work evaluated the effect of the addition of inulin on sensory, nutritional and physical parameters of white bread. Three formulations containing 0%, 6% and 10% of inulin were produced. Physical analyses of mass, volume, specific volume, density, centesimal composition, glycemic index (GI) and qualitative descriptive sensory analyses, were carried out. The reduction in bread volume seen with 10% inulin was higher than that reported in the literature. Bread weight did not differ statistically. There was an 85% reduction in fat content for bread with 6% inulin and 86% for bread containing 10% inulin. Glycemic index in bread containing 10% inulin was lower than bread with 6% inulin and equal to inulin-free bread. ObjetivoFormular bebida para crianças de 4 a 6 anos, à base de flocos de abóbora adicionada de inulina, e caracterizá-la quanto ao valor nutricional, à aceitação e ao efeito prebiótico. MétodosO valor nutricional da bebida foi avaliado por meio de análise da umidade, de proteínas, lipídeos, cinzas, fibra alimentar, carboidratos e carotenóides. As características microbiológicas foram avaliadas por meio de análises de coliformes a 35°C e a 45°C, Staphylococcus aureus, Salmonella ssp, Bacillus cereus, de contagem padrão de aeróbios, bolores e leveduras. A aceitabilidade foi determinada por testes sensoriais, aplicados em duas creches da região metropolitana do Recife (PE), o efeito prebiótico foi avaliado por fermentação in vitro, em meio diferencial para bactérias homefermentativas e heterofermentativas-Ágar, e as análises de ácidos graxos de cadeia curta, foram avaliadas por cromatografia a gás. ResultadosOs resultados físico-químicos demonstram que as formulações pouco diferiram quanto à composição centesimal e que a ingestão 200mL/dia contribui, em média, com 10,8%, 36,0%, 10,2%, 12,6%, 37,1% e 126,4% da Recomendação de Ingestão Diária de energia, proteínas, carboidratos, lipídeos, fibra alimentar e carotenóides, respectivamente. Os resultados microbiológicos comprovaram a inocuidade do produto; os sensoriais que as formulações obtiveram uma aceitação em torno de 70% e os dados da avaliação do efeito prebiótico sugerem maior estudo sobre o tema.
With the modern and fast pace of life, the number of people who eat out has increased; consequently there has been an increase in the demand for work in establishments in the collective meals sector, making work environments susceptible to the emergence of occupational risks which may compromise the physical, mental and social health of workers. In order to mitigate these risks, one must have the knowledge of how they can interfere in the quality of life and work of the employees. Considering these aspects, occupational risks were evaluated in two restaurants in the metropolitan area of Recife-PE. For the evaluation of these were studied the levels of noise, heat and illumination. The chemical risks and physical-ergonomic relationship were also evaluated. It was observed in all the analyzes made, some type of discomfort to the collaborators. The noise analysis showed discomfort, where the waiter was exposed to levels of 83 dB, in the heat exposure the cooking area contributed to the thermal discomfort, where the exposure of 30.7 IBTUG was found and insufficient lighting in the area of washing pots with 86 lux. Risks arising from the incorrect use of PPE's and lack of these were found in the handling of chemicals and in the ergonomic risks was observed inadequacy of the height of worktops. From these results, it is fundamental to promote corrective measures to provide a comfortable work environment with reduced wear for the employee, so that there are no negative consequences for the company, as well as the customer.
The study aimed to analyze the physicochemical properties and starter culture viability of frozen yogurts produced with liquid cheese whey (LCW) and inulin at different proportions (F0: 66% LCW and 0% inulin; F1: 65% LCW and 1% inulin; F2: 64% LCW and 2% inulin; F3: 62% LCW and 4% inulin). Results demonstrated that the frozen yogurt F3 presented higher total solids and carbohydrates levels. LCW and inulin contributed to the overrun increase (11.8-18.2%) but did not interfere significantly in the retardation of the melting rate and range in the samples’ hardness. Over the storage time, formulation F3 showed lower pH and higher titratable acidity. However, from the sixtieth day of storage, the formulations of frozen yogurts varied in the pH and titratable acidity profile associated with the decline in the viability of starter cultures. Even so, the inulin supplementation positively affected the strains’ viability during storage. Based on our data, the formulation F3 presented better nutritional value, physicochemical characteristics, and stability over the storage period.
