Abstract. Bahan pangan yang disimpan mengalami perubahan kualitas diantaranya perubahan warna, bau, timbulnya lendir, serta perubahan pH. Perubahan-perubahan ini terjadi akibat aktivitas dan pertumbuhan bakteri pembusuk serta reaksi fisiologis pada bahan pangan tersebut. Label pintar yang diaplikasikan pada bahan pengemas dapat menjadi solusi untuk mengetahui perubahan parameter mutu yang terjadi selama penyimpanan. Tujuan dari penelitian ini adalah untuk mengkaji efektifitas antosianin bunga telang sebagai indikator pH pada penyimpanan daging. Bunga telang diekstraksi antosianinnya untuk membuat indikator pH, kemudian diuji aktivitas indikator pH dalam bentuk sensitivitasnya terhadap perubahan warna daging sapi segar pada rentang pH 1-12. Konsentrasi antosianin bunga telang yang didapatkan pada penelitian ini adalah 121,90±1,67 mg/L. Label pintar yang diaplikasikan sebagai indikator pH telah memberikan perbedaan perubahan warna pada berbagai rentang pH dari pH 1-12. Ekstrak antosianin bunga telang berubah dari warna pink menjadi pink ke unguan pada range pH 1-3, perubahan warna ekstrak antosianin ungu menjadi biru untuk range pH 4-10, biru gelap pada pH 11 dan kuning gelap untuk pH 12. Label indikator yang diproduksi mampu digunakan untuk mengetahui perubahan tingkat kesegaran daging berdasarkan perubahan pH selama penyimpanan dilihat dari parameter Lightness (L*), Chroma (C*), dan Hue (H) terhadap perubahan pH daging sapi segar.
Lesser yam (Dioscorea esculenta L.) is a potential starch source that can be found easily in Indonesia but has limitations in its application due to its characteristics. For this reason, native lesser yam starch was modified to improve its functional properties. The hydrothermal modification was chosen because it is safe and environmentally friendly. The hydrothermal modifications used in this research were Heat Moisture Treatment (HMT) and Annealing (ANN). This work aims to increase the use of local tubers as an alternative starch source and to study the effect of hydrothermal modification on the functional properties of lesser yam starch such as swelling power, solubility, and freeze-thaw stability. HMT was carried out using 3 moisture levels (20%, 25%, 30%) and 3 heating time levels (4h, 8h, 16h). ANN using 3 starch and water ratio levels (1:2; 1:3; 1:5) and 3 heating time levels (6h, 8h, 10h). The results indicated that swelling power and solubility decreased with the increasing moisture level in HMT and ANN in general, but have various effects in syneresis depend on moisture level and heating time. HMT modified starch prepared at 25% moisture level and 4h heating time and ANN modified starch prepared at starch: water ratio 1:3 and heating time 10h is concluded to be the best choice for food product application especially thermally stable need food product.
<em>Butterfly pea (Clitoria ternatea L.) is an indigenous Indonesian flower that is usually consumed as a natural ingredient in herbal drinks and nutraceutical products. It contains several bioactive compounds that showed strong antioxidant activity to neutralize free radical compounds from foods. The aim of this study was to identify the bioactive compounds, antioxidant capacity and the organoleptic characteristics in the brewed of dried butterfly pea. The experimental design of this study used a completely randomized design with two factors: 1) dried butterfly pea content in water : 0,5; 1,0; dan 1,5 (g/200 ml) and 2) brewing levels (1, 2, and 3 times). The phytochemical screening analysis revealed that the brewed butterfly pea contained bioactive compounds such as flavonoids, tannins, saponins, steroids, and triterpenoids. The longer dried butterfly peas soak in water showed the higher level of total anthocyanin content, total phenolic compounds, and antioxidant activity. Organoleptic analysis showed significantly effect of the colour but not the odour or flavour of the brewed dry butterfly pea.</em>
The purpose of this research was to observe the student’s collaboration of food technology department in 2019 through basic physics practicum. The research method used classroom action research which was divided into four parts, that is planning, action, observation, and reflection. This research was done into four groups and accompanied by each observer. They had to take responsibility to observe the collaboration skill of each student in the group. The results of this research showed that the collaboration skill increased in every part. Group one of the first part showed a result of 45% with moderate success criteria, it increased in the second part to 51.11% (moderate), it increased in the third part to 76.67% (high), and it increased in the fourth part to 92.78% with very high success criteria. So it happened in group two, group three, and group four. Group two of the first part showed a result of 42.22% (moderate), in the second part to 51.117% (moderate), in the third part to 71.67% (high) and in the fourth part to 90% (very high). Group three of the first part showed a result of 46% (moderate), in the second part to 52.67 (moderate), in the third part to 79.33% (high), and in the fourth part to 92.67% (very high). Group four of the first part showed a result of 39.33% (low), in the second part to 56% (moderate), in the third part to 82.67% (very high), in the fourth to 92% (very high).
