Fermentation is a crucial step in the post-harvest processing of cocoa beans. This process comprises mixed culture microbial activities on the cocoa bean pulp, producing metabolites that act as important precursors for cocoa flavour development. Variations in the microbial population dynamics during the fermentation process may induce changes in the overall process. Thus, the introduction of a specific microbial starter culture may improve the quality of the fermentation. This article discusses the effects of the addition of Saccharomyces cerevisae var. Chevalieri starter culture on cocoa bean fermentation. The dynamics in the yeast concentration, sugary pulp compounds and metabolic products were measured during fermentation. The alterations in the dynamic metabolite profile were significant, although only a slight difference was observed in the yeast population. A higher fermentation index was measured for the cocoa bean fermentation with yeast starter culture, 1.13 compared to 0.84. In conclusion, this method can potentially be applied to shorten the cocoa bean fermentation time.
Kopi robusta Cibulao merupakan salah satu produk unggulan yang banyak dikonsumsi masyarakat dan memiliki kekhasan dalam sajian tubruk. Dalam teknik penyeduhan, suhu dan tingkat kehalusan bubuk menjadi faktor penentu yang mempengaruhi kualitas cita rasa seduhan kopi yang dihasilkan. Semakin tinggi suhu penyeduhan maka hal tersebut akan meningkatkan laju ekstraksi komponen komponen kimia yang larut dalam air. Kehalusan partikel kopi akan meningkatkan luas permukaan dan laju ekstraksi kopi pada saat penyeduhan. Penelitian ini dilakukan untuk mengidentifikasi atribut cita rasa kopi pada berbagai suhu penyeduhan (85, 92, 99oC) pada berbagai tingkat kehalusan bubuk (halus, medium dan kasar). Penilaian tiap sampel dilakukan secara skoring dengan 2 (dua) kali pengulangan. Dari keseluruhan penilaian, atribut cita rasa seduhan kopi dilakukan oleh panelis terlatih. Hasil menunjukkan bahwa atribut cita rasa sajian tubruk kopi robusta Cibulao dengan penilaian tertinggi berada pada suhu penyeduhan 92oC dengan tingkat kehalusan medium.
Polyphenols are the major bioactive compounds of cocoa beans. The addition of unfermented cocoa beans powder is used to enhance the functional properties of the chocolate drink. This study aimed to analyze the sensory profile of chocolate drinks made from a mixture of commercial cocoa powder and non-fermented cocoa beans by the projective mapping method. Seventy-five naive panelists tested four types of chocolate drink formulations and one benchmark (BM). The beverage formulations based on commercial cocoa powder consist of Formulations 1 (F1), F2, F3, F4 namely with the addition of 0, 10%, 20%, and 30% unfermented cocoa powder, respectively. The result showed that samples F1, F2, F3, and F4 had the dominant attributes of chocolate aroma, bitter taste, and bitter aftertaste. Whereas, BM has a dominant sensory profile of chocolate aroma, sweet taste, and sweet aftertaste. The highest value elevation (95o) is the benchmark (commercial chocolate powder drink). The next height value is in sample F1 which is located at an altitude of 20o-30o. Samples F2, F3, and F4 are the samples that have the lowest elevation (20o). Thus, the addition of cocoa powder from unfermented cocoa beans has not been accepted by consumers due to its bitter taste and bitter aftertaste.
