There are several drying techniques for storing fresh food products for a long time without decomposition. These include hot air drying, vacuum drying, drying with solar collectors, microwave drying and freeze drying. Natural convection solar tray dryer is used for ensuring economic and product quality of operations. In this study, apple slices were sliced 4 and 10mm thick and dried in natural convective solar dryer to examine the effect of drying separable moisture ratio on drying kinetics of apple slices. The experiments were carried out 40°C, 44°C and 48°C at different drying temperatures and 0.009g/min, 0.01g/min and 0.012g/min at different drying air rate. Drying kinetics were examined according to Page, Midilli and Henderson-Pabis models. For the drying kinetics, the Henderson and Pabis model which are more suitable model.
