The synergistic effects of Cu, Fe, Mn, Zn, and Al on the evolution of different volatile sulfur compounds (VSCs) in a Chardonnay and a Shiraz wine have been investigated. The evolution of H2S, MeSH, and DMS were influenced by metal addition, and in some instances, a combination of metals was responsible for the largest variation in the concentration of VSCs. The metals and metal combinations associated with significant changes in VSC concentrations in both Chardonnay and Shiraz samples after anaerobic storage were Cu, Fe, Zn, Al, Cu*Fe, Cu*Mn*Al, and Cu*Zn*Al for H2S; Cu, Zn, Fe*Mn, and Cu*Fe*Mn for MeSH; and Al and Zn*Al for DMS. The effect of Cu addition on the evolution of VSCs has previously been shown; however, this investigation has demonstrated that metals other than Cu could also be involved in the catalytic release of VSCs and that the interactions and combinations of metals are important. In some instances, the metal effect was reversed, associated with significant decreases during high oxygen conditions and with significant increases during low oxygen conditions.

The territorial marking fluid of the male Bengal tiger, Panthera tigris, consists of a mixture of urine and a small quantity of lipid material that may act as a controlled-release carrier for the volatile constituents of the fluid. Using gas chromatography and gas chromatography-mass spectrometry, 98 volatile compounds and elemental sulfur were identified in the marking fluid. Another 16 volatiles were tentatively identified. The majority of these compounds were alkanols, alkanals, 2-alkanones, branched and unbranched alkanoic acids, dimethyl esters of dicarboxylic acids, γ-and δ-lactones, and compounds containing nitrogen or sulfur. Several samples of the marking fluid contained pure (R)-3-methyl-2-octanone, (R)-3-methyl-2-nonanone, and (R)-3-methyl-2-decanone, but these ketones were partly or completely racemized in other samples. The γ-lactone (S)-(+)-(Z)-6-dodecen-4-olide and the C8 to C16 saturated (R)-γ-lactones and (S)-δ-lactones were present in high enantiomeric purities.The chiral carboxylic acids, 2-methylnonanoic acid, 2-methyldecanoic acid, 2-methylundecanoic acid, and 2-ethylhexanoic acid were racemates. Cadaverine, putrescine, and 2-acetylpyrroline, previously reported as constituents of tiger urine, were not detected. The dominant contribution of some ketones, fatty acids, and lactones to the composition of the headspace of the marking fluid suggests that these compounds may be important constituents of the pheromone. Although it constitutes only a small proportion, the lipid fraction of the fluid contained larger quantities of the volatile organic compounds than the aqueous fraction (urine). The lipid derives its role as controlled-release carrier of the chemical message left by the tiger, from its affinity for the volatiles of the marking fluid. Six proteins with masses ranging from 16 to 69 kDa, inter alia, the carboxylesteraselike urinary protein known as cauxin, previously identified in the urine of the domestic cat and other felid species, were identified in the urine fraction of the marking fluid.

The strong bond between ewe and lamb formed shortly after parturition is an important factor in lamb survival. Evidence exists that a ewe can distinguish her lamb by its unique smell, but the constituents of such a putative olfactory cue have not yet been identified. We have now identified 133 volatile organic compounds associated with the wool of Döhne Merino lambs that we presume may be involved in neonatal recognition. Quantitative analysis and comparison of odor profiles of the twins of 16 ewes (9.69% sample group) of a flock of 165 twin-bearing ewes revealed that the wool volatiles of twins are qualitatively and quantitatively similar, but differ from those of other twins or non-twin lambs in the flock. The 88 constituents present in at least 20% of the analyzed wool samples were considered as variables for multivariate analysis.A P-value < 0.001 was calculated, indicating that the pairing of twins according to the qualitative and quantitative composition of the wool was significant. Bioassays carried out during the lambing seasons of 2009 and 2010 confirmed the previously established role of lamb odor in ewe-lamb recognition. However, when alien lambs were dressed in jackets sprayed with synthetic mixtures formulated to match the chemical composition of the effluvia of the ewes' own lambs, ewes rejected the aliens. This is possibly because the VOCs were not released in quantitative ratios sufficiently accurate to emulate the odor of the ewes' own lambs.
