Abstrak Susu kacang hijau adalah salah satu diversifikasi pangan hasil olahan kacang hijau. Proses pembuatan susu kacang hijau dengan menggunakan teknik Ultra High Temperature (UHT) banyak dijual di pasaran. Sebagai alternatif lain agar susu kacang hijau memiliki daya simpan yang tinggi tanpa memerlukan peralatan dan biaya yang besar, maka perlu adanya penambahan bahan pengawet alami seperti jahe merah pada produk susu kacang hijau. Secara umum penelitian ini bertujuan untuk mengetahui pengaruh persentase penambahan sari jahe merah (Zingiber officinale var. Rubrum) terhadap daya simpan susu kacang hijau (Phaseolus radiatus L.). Penelitian ini terdiri dari dua tahap yaitu penelitian pendahuluan dan penelitian utama. Penelitian pendahuluan dilakukan untuk mengetahui daya terima (organoleptik) yang terbaik dari beberapa variasi sembilan perlakuan penambahan sari jahe merah. Setelah penelitian pendahuluan dilakukan dan diperoleh hasil perlakuan terbaik yang disukai panelis, dilanjutkan dengan penelitian utama untuk mengetahui daya simpan susu kacang hijau. Hasil dari penelitian pendahuluan didapat tiga perlakuan yang disukai panelis yaitu P3 (0,75%), P5 (1,25%), dan P6 (1,5%). Tiga perlakuan tersebut kemudian diujikan daya simpannya pada penelitian utama. Didapatkan hasil bahwa Q0 (perlakuan kontrol) dapat bertahan selama 0 hari, perlakuan Q1 dengan penambahan sari jahe merah 0,75% dan Q2 (1,25%) memiliki daya simpan selama 1 hari, dan Q3 (1,5%) merupakan perlakuan yang terbaik yang memiliki daya simpan terlama yaitu selama 2 hari. Semakin banyak penambahan sari jahe merah, maka semakin lama daya simpan susu kacang hijau. Susu kacang hijau terbaik yang disukai dan memiliki daya simpan yang lama adalah dengan penambahan sari jahe merah sebanyak 1,5%.
This research aimed to analyze the yield of torbangun extract, flavonoid content, and antioxidant activity of TE-S and its effect on the activity of SOD enzymes and blood glucose level in hyperglycemic rats as a DM animal model. The water content of simplicia was measured by the gravimetric method. The antioxidant activity of TE-S was determined using the DPPH method, while the total flavonoid was measured using spectrophotometry. The study was a completely randomized design using 25 Sprague Dawley rats. Rats were divided into four groups, namely NG (negative control, hyperglycemic rats), N (normal rats), HIM (control of metformin drugs 62.5 mg/kg of BW), and HIT (TE-S 620 mg/kg of BW). The treatment was carried out for 14 days. FBG levels were taken on day 0, 4, 7, 11, and 14, measured using a glucometer, while blood serum SOD levels were measured using ELISA. The study showed the water content of torbangun simplicia was 7.99% and TE-S yield from simplicia was 4.69%. TE-S contains total flavonoids of 3.91% and antioxidant activity (IC 50) of 306.28 ppm with a standard of 1 ppm vitamin C. TE-S treatment significantly decreased FBG (p=0.005, α=0.01) and increased SOD levels in hyperglycemic rats. TE-S has the potential to increase blood serum SOD levels by contributing to the availability of antioxidants and decreasing blood glucose levels in hyperglycemic rats.
Stunting prevalence in South Kalimantan has been higher than the national figure and is the sixth highest in Indonesia. Not many studies in South Kalimantan have analysed the risk factors for stunting comprehensively that combine sociodemographic factors, utilization of maternal health services, and characteristics of children. Therefore, the purpose of this study was to analyse sociodemographic factors, utilization of maternal health services, and characteristics of children under 5 as determinants of stunting in South Kalimantan Province. This study used an analytic observational method with a cross-sectional design. Data collection used secondary data from the results of South Kalimantan Baseline Health Research 2018. The total population of toddlers obtained from South Kalimantan Baseline Health Research 2018 data was 1218 toddlers, and all of them were taken as samples. Data analysis used a chi square test for bivariate test and Logistic Regression for multivariate test. There is a relationship between mother’s education level (p = 0.001), father’s education (p = 0.002), toddler age (p < 0.001), low birth weight (p = 0.05), exclusive breastfeeding (p = 0.008), and underweight (p = 0.000) with stunting. The data were continued with the Logistics Regression test and the dominant variables related to stunting were underweight (p < 0.001 with OR 18,241), under-five age (p < 0.001, with OR value for ages 24–35 months 9511), and premature birth (p = 0.027 with an OR of 2187). The conclusion of this study is that the most important factor in the incidence of stunting in South Kalimantan is underweight nutritional status.
The association of liver and muscle glycogen deposits with serum insulin levels, β-cells pancreas, and fasting blood glucose (FBG) of streptozotocin (STZ)-induced hyperglycemic rats receiving Torbangun leaves extract (TE) investigated. The intervention performed on 25 8-week-old Sprague-Dawley rats divided into four groups. Seven rats separated as a normal group (N), and other rats injected with streptozotocin (STZ). Confirmation of hyperglycemic was characterized by fasting blood glucose >126 mg/dl. Treatment group which is NG (hyperglycemic rats); N (normal rats); H-IM (62.5 mg/kg BW metformin); and H-IT (620 mg/kg BW TE) for 14 days. This study revealed that TE significantly decreased FBG levels, increased insulin production, and the amount of liver glycogen deposits (a=0.01). However, the intervention did not significantly increase the amount of muscle glycogen deposits. TE administration improves β-cells, increases the liver and muscle glycogen deposits. TE was shown to have antihyperglycemic activity by improving the β-cell, increasing blood serum insulin levels, decreasing blood glucose levels, and increasing the liver glycogen deposits.
