The aim of this study was to evaluate the physicochemical parameters, microbial count, and enzymatic activities of sheep milk at different collection periods. Analyses showed that only the contents of lactose and ash did not vary between the seasons. The milk collected in autumn presented higher lipolytic activity, while in winter presented higher values for total solids, fat, and acidity. Higher levels of protein were observed in summer and winter. Samples from spring presented higher values for pH, mesophilic and psychrotrophic counts, and proteolytic activity. The mesophilic count was lower than the one established by the European Union legislation for all seasons. The psychrotrophic count was lower than the minimum required to cause degradation problems by proteolytic and lipolytic enzymes. The results indicated that climatic condition affected the evaluated characteristics, and this information is relevant to establish criteria to produce sheep milk and dairy products.
O “requeijão cremoso” é um tipo de queijo processado brasileiro muito consumido no país, obtido da mistura de diferentes tipos de queijos com sais emulsionantes e outros ingredientes lácteos. As características deste produto são dependentes especialmente da matéria-prima proteíca utilizada e seu valor de pH. Assim, o objetivo deste trabalho foi avaliar a influência da correção do pH do requeijão elaborado com leite de ovelha nas características físico-químicas e microbiológicas durante 30 dias de armazenamento à 4 ± 0,1 °C. Os parâmetros físico-químicos mantiveram-se estáveis durante o armazenamento. A contagem de microrganismos mesófilos e Staphylococcus coagulase-positiva foi de < 1,0 log UFC.mL-1 durante todo o período avaliado. Em ambos os requeijões, com e sem correção de pH, não houve a presença de alterações visíveis na cor instrumental. O requeijão cremoso elaborado com caseína enzimática ovina, apresentou características de brilho, textura, espalhabilidade em pH’s 5,7 a 5,9 mas também tem valores próximos a 7 durante o período avaliado.
