The objectives of this study was to characterize moisture content, swelling, opacity and transparency of casein solution addition chitosan as edible films/coatings.The effect of chitosan solutions on edible films/coating was chitosan solution 4% of the amount of casein solution. The thickness average value of the casein chitosan edible film is 0.076-0.087 mm. The EFC4 treatmentwas obtained in the lowest moisture content 29.24%, swelling degree 5.48% and opacity 0.078%. High moisture content in the edible film will affect the resistance of the film produced and the packaged product. The lowest average value was found in the EFC4 treatment and EFC2 treatment with a value of transparency 0.63%. The highest concentration of chitosan solutions will tend to decrease the value of moisture content, swelling and opacity edible films/coating.
Daun kelor merupakan tanaman yang kaya akan manfaat, utamanya bagi ibu menyusui dan anak dalam masa pertumbuhan. Jelly kelor instan adalah salah satu diversifikasi produk berbasis daun kelor. Penelitian ini bertujuan untuk memperkirakan umur simpan produk jelly kelor instan, sehingga dapat memberikan hasil perhitungan umur simpan yang akurat dan sesuai dengan umur simpan produk pangan yang sebenarnya. Pendugaan umur simpan pada produk pangan instan dapat dilakukan dengan metode ASLT (accelerated shelf life testing) model kadar air kritis yang dihitung berdasarkan persamaan Labuza. Tahapan dilakukan dengan melakukan kontrol lingkungan penyimpanan sehingga dapat mempercepat reaksi yang menyebabkan kerusakan pada produk. Penyimpanan dilakukan menggunakan kemasan PP (polypropylene) ketebalan 0,03 mm pada suhu ruang yaitu 25 oC, 27oC dan 30oC. Penelitian ini menghasilkan pendugaan umur simpan 789 hari pada suhu penyimpanan 25 oC, 701 hari pada suhu penyimpanan 27oC dan 589 hari pada suhu penyimpanan 30oC.
Indonesia is one of the countries producing subtropical plants and fruits. The application of postharvest handling technology which is less reliable will change the quality of fruits. Some equipments is therefore required to know ripeness condition of fruits. This research aims at detecting the freshness of climacteric fruits such as banana with the use of brazilien extracts as a colorimetric indicator. Measurements were conducted to determine the influence of pH variations on the change in color of brazilien extract, the stability of the color of the film, respiration rate and vitamin C of banana. The results of this study indicate that the color stability of the film indicator containing sappan wood extract stored in the exicator for 6 days shows a color change from yellow to orange. Furthermore, from the observation result of banana deterioration for 6 days, it is obtained vitamin C content of 92.65 + 2.1 mg / 100 g, an increase in pH 5.1, an increase in texture profile is 10.1 mm / 10s, an increase in respiration rate is CO2 levels. It also indicates that banana deterioration is followed by color change of indicator film from yellow to dark red.
