Nowadays, for the modern consumer is important to produce qualitative food products. Also, this includes the production of baby food. The product quality means its safety. This term also characterized products for child nutrition. According to the technical regulations TR TS 034 «About meat and meat products safety» there are special factors for providing industrial sterility for meat products for children. These parameters identify safety of products in the part of the risk of microbiological damage that may occur within the technology process of canned meat for child nutrition. In the present article microbiological risks were determined for canned meat for children. Safety parameters for canned meat is established according to the technical regulations TR TS «About meat and meat products safety». At the final step, a good hydrogenic practices in the technology of canned meat for child nutrition were created in order to show the microbiological risks in the production process. In conclusion, the general hygiene practices for the food enterprise were established. Using this material, it is possible to create a system for microbiological damage management in the production technology of canned meat for child nutrition. The control measures must be taken into account the technology and general practices of the enterprise in order to obtain a product with high quality and safety.
В статье представлены результаты исследований показателей качества районированных образцов отечественных сортов картофеля, тыквы, капусты брокколи и цветной. Научно обоснован выбор растительных ингредиентов с учетом функциональности на базе требований нормативной документации и полезности их при производстве функциональных мясных продуктов для питания здоровых детей раннего возраста. На основании анализа биохимических исследований установлено, что данные овощные культуры целесообразно использовать при проектировании продуктов питания для детей, так как они содержат необходимые для ребенка витамины и минеральные компоненты. Были изучены сорта овощных культур; картофеля: Жуковский ранний, Метеор, Ред Скарлет, Ривьера, Винета и Азарт; тыквы мускатной: Витаминная, Жемчужина, Мускадэ Агро, Мускатная, Семейная; капусты брокколи: Агасси F1 и Детский деликатес F1; цветной капусты: Дачница, Альфа, Гарантия, Скайвокер F1 из коллекций ФГБОУ ВО РГАУ – МСХА имени К. А. Тимирязева и отдела земледелия и агрохимии ВНИИ овощеводства – филиала ФГБНУ ФНЦО. На базе кафедры управления качеством и товароведения продукции ФГБОУ ВО РГАУ – МСХА имени К. А. Тимирязева проведена экспертная оценка выбранных сортов. По результатам исследований составлены профилограммы дескрипторов вкуса для картофеля, тыквы мускатной, капусты брокколи и цветной. Выявлены сорта с наиболее выраженными органолептическими характеристиками, которые были отмечены комиссией экспертов. Выявленные характеристики позволяют рекомендовать изученные сорта овощных культур для обогащения мясных продуктов для детей. Анализ сортовых особенностей овощных культур позволил сделать вывод об обогащении ими продуктов для детей на мясной основе. Было установлено содержание основных пищевых веществ в предложенных овощных культурах, которые необходимы для жизнедеятельности организма ребенка в первые годы жизни. Проведенные исследования позволяют сделать вывод о том, что выбранные сорта картофеля, тыквы мускатной, капусты брокколи и цветной капусты, исходя их биохимических и органолептических данных, пригодны для производства мясных продуктов для питания детей в возрасте от 1 до 3 лет. The article presents the results of studies of quality indicators of zoned samples of domestic varieties of potatoes, pumpkin and broccoli and cauliflower. The choice of herbal ingredients is scientifically substantiated, taking into account the functionality based on the requirements of regulatory documentation and their usefulness in the production of functional meat products for the nutrition of healthy young children. Based on the analysis of biochemical studies, it has been established that these vegetable crops should be used in the design of food products for children, since they contain vitamins and mineral components necessary for the child. Varieties of vegetable crops were studied; potatoes: Zhukovsky early, Meteor, Red Scarlet, Riviera, Vineta and Azart, nutmeg pumpkin: Vitamin, Pearl, Muscade Agro, Muscat, Family, broccoli: Agassi F1 and Children's delicacy F1 and cauliflower: Dachnitsa, Alpha, Guarantee, Skyvoker F1 of the collections of the FGBOU VO RGAU – MSHA named after K. A. Timiryazev and the Department of Agriculture and Agrochemistry of the All-Russian Research Institute of Vegetable Growing, a branch of the FGBNU FNTSO. On the basis of the Department of Quality Management and Commodity Science of the Federal State Budgetary Educational Institution of Higher Education RGAU – MSHA named after K. A. Timiryazev, an expert assessment of the selected varieties was carried out. Based on the results of the research, profilograms of taste descriptors for potatoes, nutmeg pumpkin, broccoli and cauliflower were compiled. Varieties with the most pronounced organoleptic characteristics were identified, which were noted by a commission of experts. The revealed characteristics make it possible to recommend the studied varieties of vegetable crops for the enrichment of meat products for children's nutrition. An analysis of the varietal characteristics of vegetable crops made it possible to conclude that they enrich meat-based products for children. It was established the content of basic nutrients in the proposed vegetable crops, which are necessary for the vital activity of the child's body in the first years of life. The conducted studies allow us to conclude that the selected varieties of potatoes, nutmeg pumpkin, broccoli and cauliflower, based on their biochemical and organoleptic data, are suitable for the production of meat products for children aged 1 to 3 years.
