Medicinal plants are local heritage with global importance. Prunuspersica Seeds and Bark are used as traditional medicine for treatment of blood diseases, anemia rheumatism jaundice, antioxidant and anti-inflammatory agent. So the present study was planned for analysed the nutritional constituents of Prunuspersica Seeds and Bark such as Moisture, Protein, fat and ash were analyzed using AOAC methods. Carbohydrate content of the sample was estimated by Difference method. The research was designed to investigate proximate composition. The results of proximate analysis indicated that seeds and bark had appreciable amounts of Protein (2.2% and 1.0%), Carbohydrate (50.3% and 58.7%) and fat (36.9% and 29.2%) on dry basis with observed no significant difference (P≤0.05). Acceptability evaluation of prepared recopies was performed by semi trained panel through 9 point Hedonic rating scale test. The result revealed that among the recipes (Biscuits and Baked bite) prepared by adding 2%, 4%, 6% and 8% Powder of Seed and Bark that variant 1, 2 and 3 were acceptable when comparable to standard recipe. There is no significance difference (P≤0.005) when they were tested statistically. Considering the pharmaceutical action of Seeds and Bark for treatment of many diseases and that the reasonably safe to use, its development is important for the pharmaceutical industries. This study generated base line information about the peach Seeds and Bark which will be beneficial to treat various diseases. This study also indicates that both Seeds and Bark can be valuable in generating awareness among people to control various diseases and to improve their nutrition and health status.
The present study was done on different green leaves which are rich source of fibre and other micronutrients whose consumption is very less in general population due to lack of awareness or ignorance. Therefore, the effort was made to develop fibre rich value added products. Two commonly consumed products namely Pakora and Appe were developed from leaves. Beetroot leaves, Radish and Taro leaves were taken 40 gm each. Acceptability evaluation of prepared recipes was performed by semi trained panel through 9 point Hedonic rating scale test. The result revealed that among the recipes (Pakora and Appe) prepared by adding 40 gm leaves in which beetroot leave product were acceptable when compared to product developed by Radish and Taro leaves. This study concluded that these innovative value-added products can supplement fibre to a wide range of population with effective utilization of low cost leaves. The result of the Nutritive value indicated that Taro leaves had appreciable amount of Protein, Energy and fibre. Therefore, it can be concluded that products developed from Beet root was acceptable by the panel member but nutritive value was found in taro leaves.
Unfortunately, today’s world has been adapted to a system of consumption of junk foods which has several adverse effects on health.Thus the study was conducted to find out the food habits and problems associated with fast food consumption amongst the children of 3-6 years of age of Pilibhit District of UP. The result showed that cent per cent respondents consumed candies followed by potato chips, chocolate, ice-cream and soft drink, as 93.33 %, 90 %, 96.66 %, and 66.66 % respectively. Besides this the frequency of consumption was also very high. It was seen that due to the food consumption pattern the respondents were having the problem of dental caries (100%) halitosis (bad smell) (93.33 %) severe decay (93.33%) pain in teeth while consuming sweet hot and cold (80%) chalky white spots (80%) plague deposit on teeth surface (73.33 %) and brown spots (66.66 %). Junk food can affect a child’s physical development in detrimental ways, including unhealthy weight gain, which can result in self-esteem problems in future also. Thus it should be controlled.
Eat healthy and live healthy is one of the essential requirements for long life. Unfortunately, today’s world has been adapted to a system of consumption of foods which has several adverse effects on health. Lifestyle changes has compelled us so much that one has so little time to really think what we are eating is right or not. Globalization and urbanization have greatly affected one’s eating habits and forced many people to consume fancy and high calorie fast foods, popularly known as Junk foods. Diseases like stunted growth and obesity, constipation etc. have seen a profound rise in developing countries and such unhealthy junk food consumption is one of the notable factors to its contribution. This global problem of consuming junk food on a large scale and its impact on health that needs emphasis on health education which can greatly contribute to its limited consumption and switching over to healthy eating habits for the better living. By keeping in mind the following problems associated with fast food consumption the present study was conducted with the objectives i.e. to study the food habits of target group, as well as to study the health problems among target group. The result showed that cent per cent respondents consumed wafers and 93 percent, 90 percent and 86 percent used to have momo’s burger and spring roll and the frequency was thrice and twice a week respectively. That is why it was seen that due to the food consumption pattern the respondents were having less height as per their age (96 per cent) having the problem of obesity (93 per cent) constipation (86 per cent) abdominal Pain (83 per cent) and acidity (73 per cent).
