The aim of the study was to analyze the role of breeding and utilization of cold-blooded horses. The analysis was based on both published statistical data and our own survey conducted in order to examine the level of horse meat consumption among Poles and to check their food preferences regarding this type of meat. We found that horse meat is virtually absent on Polish tables. This is due to the emotional attitude the Poles foster towards horses, so half of the respondents were entirely against horse meat consumption. Despite the varied attitude of respondents towards horse meat consumption, the analysis of statistical data shows that since 2013 the number of farms keeping 10 or more cold-blooded horses has been increasing. The current direction of changes, such as the development of agritourism, an increase in the number of organic farms, farmers joining agri-environmental programs or supporting activities for sustainable agriculture, will probably increase the scale of cold-blooded horse farming.
The aim of the study was to analyze the functional and biological characteristics of the Carniolian breed of the Bielka 1 line. The research material consisted of queens subjected to stationary evaluation in ten consecutive feed seasons (2009–2018). The analysis covered such features as: honey yield, winter hardiness, spring development, swarming behavior and the behavior of bees indicating their mildness or malignancy. A statistically significant or highly significant influence of the year of evaluation was found on all the analyzed functional traits of the Bielka 1 line Carniolian bees. The bees of this line were characterized by a very good honey yield. There were positive and significant correlations between this feature and the others. No significant relationships were observed between the behavior of the Bielka 1 bees and their tendency to swarm and spring development. The bees were characterized by good winter hardiness, creating strong colonies and dynamic spring development. The good qualities of the bee colonies of this line are calm and gentleness. Moreover, they are characterized by low swarming behavior and usually received maximum scores for this feature. The Bielka 1 line can be useful in large apiaries focused on intensive production, but also in home, amateur apiaries.
The aim of the study was to analyze selected parameters influencing the technological and sensory quality of pork. The material for the study was pork from the ham muscle and the ribeye muscles. The raw material came from a meat processing plant located in north-eastern Poland. The research was carried out on 80 porkers from various farms and farms. The tests included pH in 45 minutes and 24 hours from slaughter, meat color, water holding capacity, and the chemical composition of meat. It was found that half of the porkers had a lean content of more than 50%, and the best distinction between meat of normal quality and other quality classes results from the use of two or three different evaluation methods. The measurements of color and pH are most useful in assessing the quality of meat, but for the classification to be precise, some of them must be carried out immediately on the slaughter and as soon as the carcasses have cooled down. The brightness of the meat and the final pH values enable distinguishing between DFD meat and PSE meat. The color of normal meat is very similar to that of meat with the RSE defect. Significant (P ≤ 0.01) relationships were found between the protein content and the pH of the meat measured 45 minutes and 24 hours after slaughter. Significant relationships (P ≤ 0.01) also occurred between the values of the parameter a* and b* (trichromaticity coordinates).
