The diffusion coefficient of cupric ion in aqueous CuSO4/H2S04 solution at 298.1 K is given by D2+ = ((7.80 0.25) -(6.34 1.03)[Cu2]"2} X 101' m s' for 0 to 0.02 mol liter1 [Cu2] in 0,10 mol liter' 112504. The value at [Cu2} =0 is (7.80 0.25) X 101' m1 s', and this value can be used at any H2S04 concentration ranging from 0 to 0.50 mol liter" without exceeding the error in D2+. All errors are 95% confidence intervals. These diffusion coefficients were determined with a copper rotating disk after separating the activation and diffusional components of the disk current and after correcting for charge-modified diffusion (migration) and for the approximations used in the integration of mass transport equations in the derivation of the Levich equation. If these corrections are not made, diffusion coefficients containing systematic errors of up to ca. 15% maybe produced. Tartary buckwheat (Fagopyrum tataricum Gaertn.) albumin was hydrolyzed by alkaline protease, and three new antioxidant peptides (P1, P2, and P3) were successfully separated from the hydrolysate (TBAH). The sequences of the three antioxidant peptides were Gly‐Glu‐Val‐Pro‐Trp (GEVPW), Tyr‐Met‐Glu‐Asn‐Phe (YMENF), and Ala‐Phe‐Tyr‐Arg‐Trp (AFYRW), and their molecular weights were 586.65, 702.79, and 741.85 Da, respectively. All three peptides have a good antioxidant capacity, and P3 (AFYRW) demonstrates the best antioxidant activity of the three. The IC50 values of AFYRW for scavenging hydroxyl radicals (OH·) and (1,1‐diphenyl‐2‐picrylhydrazyl) DPPH· free radicals were 0.65 and 0.64 mM, respectively. In addition, AFYRW exhibits the strongest lipid peroxidation inhibition ability and the highest reducing power. The results of this research indicate that the three isolated peptides can be used in the development of various antioxidant additives in the food and pharmaceutical industries.
