Eight pepper genotypes (Capsicum sp., Capsicum annun L., C. chinense Jacq, and C. baccatum L. var. umbilicatum) were assayed for total phenolics, anthocyanins, carotenoids, vitamin C, and total antioxidant activity in order to determine their bioactive compound profile and to establish the correlations between these compounds and their antioxidant activity. The genotype IAN 186311 (C. chinense Jacq.) showed the highest total antioxidant activity and the highest concentrations of phenolic compounds. As for the content of carotenoids, the genotype with the highest concentration was IAN 186324 (Capsicum sp.), and the genotype IAN 186305 (C. baccatum L. var. umbilicatum) showed the highest content of vitamin C and anthocyanins. Terefore, it can be concluded that the Capsicum sp. genotypes analyzed demonstrated a rather high diversity of bioactive compounds that should be further explored given the benefits they can provide to consumer health.
RESUMO-O objetivo deste estudo foi caracterizar física e físico-quimicamente frutos de 21 matrizes de pupunheira (Bactris gasipaes Kunth), visando a obter subsídios que permitam avançar com o programa de melhoramento genético, em especial para características da polpa do fruto. Os frutos provenientes de diferentes genótipos foram caracterizados quanto à dimensão dos frutos e caroço, umidade, proteínas, lipídeos, cinzas, fibras e carotenoides totais. Os resultados obtidos para as diferentes variáveis analisadas demonstraram diferenças entre os frutos obtidos de diferentes genótipos. A análise de proteínas apresentou valores que variaram de 4,20 a 6,79%, com destaque para a matriz B04-P20, que apresentou o maior valor. Para lipídeos, os teores variaram bastante, com valores entre 8,25 e 40,83%, destacando-se a matriz B02-P30 com o maior teor de lipídeos. Os teores de carotenoides totais das matrizes de pupunheira variaram de 8,02 a 124,90µg/g, com destaque para as matrizes B02-P30 (124,90µg/g) e B05-P45 (123,04µg/g), indicando que a pupunha pode contribuir de maneira importante na ingestão de antioxidantes na dieta. De maneira geral, as análises físicas e físico-químicas dos frutos mostraram diferenças significativas entre as matrizes para os caracteres estudados, evidenciando ser um conjunto geneticamente promissor para a prática da seleção. PHYSICAL AND CHEMICAL CHARACTERISTICS OF PEACH PALM FRUITS IN THE STATE OF PARÁABSTRACT -The aim of this study was to assess the physical and physical-chemical characteristics of the fruits of 21 reproductive peach palms to help guide future research on genetic improvements of the species, especially regarding the fruit pulp. Fruits from each genetic material were characterized by fruit and seed size, moisture, protein, lipid, ash, fiber and total carotenoids. Average values for all studied variables were significantly different among all individuals. Protein values ranged from 4.20 to 6.79%, especially for B04-P20 that showed the highest value. Lipid levels varied markedly, with values ranging between 8.25 and 40.83%, and matrix B02-P30 presenting the greatest levels of lipids. Total carotenoids ranged from 8.02 to 124.90 mg/g, with matrices B02-P30 (124.90µg/g) and B05-P45 (123.04µg/g) presenting the highest values. The high total carotenoid values observed indicates that peach palms could make a significant contribution to antioxidants in the diet. Overall, the physical and physical-chemical assessment revealed significant differences among the studied reproductive individuals for the characters studied, indicating that this species offers considerable promise for future research on genetic improvements.
The objective of this work was to develop an extruded breakfast product containing broken rice and split old beans and to verify the influence of the extrusion process on their physicochemical, technological, and sensory characteristic. The final product had a protein content of 9.9 g.100 g-1, and therefore it can be considered a good source of proteins for children and teenagers. The dietary fiber content of the final edible product was 3.71 g.100 g-1. Therefore, the breakfast meal may be considered as a source of dietary fiber according to Brazilian law . As for the technological properties, the extruded product presented an expansion index of 8.89 and apparent density of 0.25 g.cm-3. With regard to the sensory analysis, the acceptance average was ranked between 6.8 and 7.7, corresponding to the categories "liked slightly" and "liked very much". With regard to purchase intention, 79% of the panelists said they would certainly or possibly purchase the product. Broken rice and split old beans are interesting alternatives for the elaboration of extruded breakfast products presenting good nutritional, technological, and sensory qualities.
The effect of extrusion operating conditions on main quality properties of glutenfree expanded snack-type products, developed from rice grits and bandinha flour formulations, was studied. The protein content in the extrudate varied from 9.44 to 14.74 g/100 g for formulations containing 13 and 47% bandinha flour, respectively, processed at 85C and 15% feed moisture. Apparent density and the radial expansion index of the extrudate were significantly (P < 0.05) affected by bean flour content, moisture content, temperature and the interaction between moisture content × temperature. The most suitable extrusion conditions were 30 g/ 100 g bean flour content, 14 g/100 g moisture content and 80C die temperature, which resulted in a product with a high radial expansion index and crude protein of 9.5 and 13 g/100 g, respectively, and a low apparent density of 0.20 g/cm 3 . PRACTICAL APPLICATIONSThere is a dynamic growth trends taking place in the gluten-free market due to its relationship to celiac disease, wheat allergy, gluten intolerance and gluten sensitivity. To date, most gluten-free products in the market are in the form of pasta and bakery products. However, there is an open niche for gluten-free foods in the form of expanded snack-type products. The flours of underutilized broken rice and beans ("bandinha"), processed under the selected range of extrusion conditions in this study, have great potential for the development of value-added, protein-rich, gluten-free foods in the form of expanded, low-density, snack-type products. The factorial design used to determine the relationship between the independent and the response variables aided to determine the most suitable processing conditions to generate a quality end product.
The effects of temperature, time, pressure and brine concentration were assessed during osmotic dehydration (OD) of H. edentatus fillet. The response surface methodology (RSM) showed that using vacuum during the OD process did not cause a statistically significant change (p>0.05) on the water loss (WL), solid gain (SG) and water activity (a w ). The other factors showed a statistically significant effect (p≤ 0.05) on at least one of these responses. Through RSM, the following condition could be defined for the OD process: brine concentration at 25 % NaCl, 25°C, 120 min and atmospheric pressure. The Azuara model was shown to be effective in predicting the WL and SG kinetics during the OD process. The simplified solution of Fick's second law of diffusion for a slab geometry was used to calculate the average values of apparent diffusion coefficient (D eff ), namely 4.73×10 −10 m 2 / s for WL and 1.33×10 −9 m 2 /s for SG.
