ABSTRAKPenelitian ini bertujuan untuk menganalisis dan menentukan keberadaan serta tingkat residu antibiotik terutama golongan tertasiklin pada sampel lapang hati ayam broiler yang berada di Kota Kendari. Metode yang digunakan meliputi observasi lapang, pengambilan sampel dan pengujian sampel di laboratorium. Penentuan lokasi pengambilan sampel secara purposive sampling. Lokasi sampling (pasar) yang dijadikan sebagai tempat pengambilan sebanyak 5 (lima) pasar sesuai dengan kriteria yang telah ditentukan. Jenis sampel yang digunakan adalah hati ayam potong yang berasal dari beberapa pedagang dengan kisaran bobot karkas/bobot hati yang berbeda. Pengambilan sampel hati dilakukan dengan metode simple random sampling. Pengujian sampel digunakan sesuai dengan Standar Nasional Indonesia dengan metode Tapis. Pengujian residu dilakukan melalui uji skrining test. Hasil penelitian menunjukkan pemeriksaan residu antibiotik pada semua sampel adalah negatif. Kesimpulannya adalah produk peternakan dari ayam potong yang di pasarkan di Kota Kendari sebagian besar tidak mengandung residu antibiotik. Peternak ayam potong yang ada di Kota Kendari sudah mulai bijak dalam penggunaan antibiotik serta penentuan waktu panen.Kata kunci: ayam broiler, hati ayam, residu antibitikABSTRACT This study aimed to analyze and determine the presence and level of antibiotic residue, especially tetracycline group in broiler chicken liver in Kendari. The methods used in this study were field observations, sampling, and laboratory testing. Determination of sampling location was done by purposive sampling. The sampling location (market) chosen for this study were 5 (five) markets based on predetermined criteria. The type of sample collected was broiler liver from several butchers with different ranges of carcass / liver weight. Liver sampling was done using simple random sampling method. The sample was tested using Tapis method in accordance to Indonesian National Standard (SNI). Tetracycline residue was tested by screening test. The results showed negative antibiotic residues in all samples. It can be concluded that livestock products from broiler chicken in Kendari market are mostly free from antibiotic residue. It can be assumed that the broiler farmers in Kendari have become wise in using antibiotics and the determination of harvest after antibiotic treatment. Kebutuhan masyarakat terhadap daging ayam lokal cenderung mengalami peningkatan yang diindikasikan dengan semakin berkembangnya industri kuliner dan bertambahnya restoran maupun rumah makan yang menyajikan daging ayam lokal khususnya di kota-kota besar. Kelurah Labibia merupakan salah satu wilayah di Kota Kendari yang masih memiliki peluang yang sangat besar untuk pengembangan ayam kampung. Peternak di Kelurahan Labibia Kecamatan Mandonga Kota Kendari memanfaatkan pekarangan rumah, untuk usaha budidaya ayam kampung. Kurangnya pengetahuan dan pemahaman peternak dalam pemilihan induk dan pejantan unggul menjadi masalah utama yang di hadapi oleh peternak di Kelurahan Labibia Kecamatan Mandonga Kota Kendari. Selain pakan dan manajemen pemelihraan, bibit juga merupakan faktor penentu dalam pengembangan budidaya ayam kampung. Peningkatan pengetahuan dan keterampilan peternak perlu dilakukan, penyuluhan tentang tata cara atau metode seleksi indukan dan pejantan unggul melalui Program Bina Desa Fakultas Peternakan Universitas Halu Oleo. Pelaksanaan Program Bina Desa Fakultas Peternakan Universitas Halu Oleo dilaksanakan di Kelurahan Labibia Kecamatan Mandonga Kota Kendari. Pelaksanaan program dilakukan dalam bentuk penyuluhan baik secara massal, kelompok dan individu dengan tetap memperhatikan protokol pencegahan Covid-19. Materi penyululuhan meliputi penguatan kelembagaan dan metode seleksi indukan dan pejantan unggul. Berdasarkan kegiatan yang telah dilaksanakan, hasil yang telah dicapai pada Program Bina Desa di Kelurahan Labibia Kecamatan Mandonga Kota Kendari melalui penyuluhan dan bimbingan teknis manajemen seleksi ayam kampung meningkatkan pengetahuan dan pemahaman kelompok ternak sehingga peternak dapat meningkatkan produktifitas ayam kampung
One of chicken farming byproduct that has potential to be processed to become more economical product is manure. If not treated well, the manure could spread odour and become the media for parasitic vectors like flies. Chicken manure can be processed into organic fertilizer for vegetable farming. Aside from personal use, the organic fertilizer then can be sold and increase the farmers’ income especially in COVID-19 pandemic where most economical sector collapsed. The problem faced by farmers at Anggalomelai, Abeli sub-district was their lack of knowledge on manure processing technologies. This themed KKN Program by FPt UHO aimed to offer solutions for farmers by giving technical guidance and counseling on manure processing technologies. This program was held for one month starting from June 13th until July 13th, 2020 on Anggomelai, Abeli sub-district, Kendari. The program was carried by technical guidance and counseling for farmers, either face to face or online by still maintaining the COVID-19 prevention protocols. Result obtained from this program showed the increasing knowledge of farmers in Anggomelai, Abeli sub-district especially in prrocessing chicken manure into organic fertilizer for vegetable farming.
The lack of knowledge and skills in preparing domestic chicken rations will affect farmers' incomes. The fact so far shows that commercial animal feed that meets the local market of Southeast Sulawesi comes from outside the Southeast Sulawesi region, particularly South Sulawesi and Java. The price of commercial feed is certainly not cheap and is increasing from year to year, which affects the poor purchasing power of farmers. Improving farmers' knowledge and skills through technical guidance and advice as part of the FPHO Thematic Community Service Program will provide knowledge about the production of domestic chicken feed for farm animals to meet the food needs needed for growth, development and reproduction . This service will run for a month starting June 13, 2020 through July 13, 2020 in Nambo Village, Nambo District, Kendari City. This non-profit activity was carried out with the involvement of the participants in the UHO FPt Thematic KKN. The program is implemented in the form of technical guidance and advice, namely (1) technical guidance and virtual / online advice; and (2) technical guidance and advice using personal methods both individually and over and in compliance with the Covid 19 Prevention Protocol. The material for this Community Service Extension program is the technology for the production of animal feed based on local raw materials. Based on the activities undertaken, the results of FPt UHO's thematic community service will improve farmers 'knowledge and skills in producing local chicken feed based on local raw materials to reduce feed costs and improve farmers' income in Nambo village, Nambo District
