Liverwort (Marchantia paleacea) from Cibodas Botanical Garden Bogor Indonesia was used as raw materials in this research. The objective of this research was to assess the potential of antibacterial activity of liverwort (M. paleacea). Maceration using 4 different solvents i.e ethanol, methanol, ethyl acetate, and hexane was used to extract the active compound. The potential of antibacterial activity of the extracts was assesed by agar diffusion method and direct-contact test by determining the minimum inhibitory concentration (MIC). The data showed that the ethanol extract had the biggest inhibition zone on three test bacteria. The inhibition zone and MIC were 10.8 mm and 0.7 mg/ml for S. aureus; 4.5 mm and 8.0 mg/ml for S. Typhimurium; 5.8 mm and 5.9 mg/ml for P. aeruginosa, respectively. The total phenol content of the extract was 22 mg/g. Phenolic, triterpenoid and flavonoid were positively detected in the extracts.
One of the problems arising from overconsumption of meat is degenerative diseases and many people are turning to vegetarianism. Vegetarians tend to experience protein deficiency problems, therefore one of the most popular food preparations for the community and have high nutritional value is making jerky analogue of banana hearts with the addition of black soybean tempeh flour. To analyze differences in nutrient content and acceptability (color, taste, aroma and texture) with the addition of black soybean tempe flour. This type of research is an experimental study, there are 4 formulations with a ratio of black soybean tempeh flour banana heart and in analog jerky, namely F0 (100%), F1 (15%: 85%), F2 (20%: 80%), F3 (25%: 75%). The Nutritional Testing which was conducted was the analysis of proximate levels and crude fiber content. Organoleptic assessment uses a Likert form with a scale of 1-5 against 50 consumer panelists. Based on the assessment of the results of nutrition and consumer panelists, the selected formulations were F3 with 27.24 g protein, 11.23 g fat, 22 g carbohydrates, 5.71 g crude fiber content, 36.05 g moisture content and ash content 3.46 g. There is an effect of adding black soybean tempe flour to the nutritional value of analog jerky. There is a significant difference in the acceptability of texture and taste in analog jerky.
Latar Belakang : Kurangnya asupan serat pada remaja mencapai prevalensi 10%. Salah satu upaya meningkatkan asupan serat dengan pembuatan produk yang disukai remaja, menggunakan kacang merah sebagai sumber serat dan buah naga merah yang mengandung antioksidan dalam proses fermentasi yaitu yogurt. Tujuan : Memanfaatkan kacang merah dan buah naga merah dalam pembuatan yogurt, untuk membantu memenuhi serat pada remaja. Metode Penelitian : Jenis penelitian ini adalah eksperimental. Terdapat empat jenis perlakuan dengan perbandingan sari kacang merah dan sari buah naga yaitu, 0 ml:0 ml, 90 ml : 10 ml, 80 ml : 20 ml, 70 ml : 30 ml. Penilaian organoleptik dilakukan menggunakan instrumen Visual Analog Scale (VAS). Analisis statistik perbedaan nilai gizi dan daya terima menggunakan One Way Anova dan Bonferroni pada pvalue < 0.05. Hasil Penelitian : Terdapat perbedaan signifikan antara keempat formulasi pada nilai serat dan aktivitas antioksidan (p <0.05). Nilai serat pada yogurt F1 0.59 g dengan aktivitas antioksidan tinggi. Kesimpulan : Yogurt F1 dapat dijadikan makanan selingan yang dapat memenuhi 6% kebutuhan rata-rata serat pada remaja dan mengandung aktivitas antioksidan yang tinggi. Pada penelitian selanjutnya, disarankan untuk uji alergen dan daya simpan produk.
Latar Belakang: Serai memiliki kandungan zat besi yang berasal dari nabati. Selama ini kandungan gizi pada produk permen jelly yang beredar di pasaran belum optimal, sehingga dibuatlah produk permen jelly dengan penambahan ekstrak serai dan tomat sebagai fortifikasi pangan. Tujuan: Mengetahui kadar proksimat, Fe, dan vitamin C serta daya terima produk permen jelly. Metode: Penelitian ini adalah eksperimental. Terdapat 4 jenis perlakuan (rasio dalam gram) dengan dua kali pengulangan yaitu, F0 (0 serai : 0 tomat), F1 (75 serai : 25 tomat), F2 (50 serai : 50 tomat), dan F3 (25 serai : 75 tomat) terhadap konsentrasi kandungan ekstrak. Penilaian organoleptik dilakukan menggunakan instrumen Visual Analog Scale (VAS). Analisis statistik perbedaan nilai gizi dan daya terima menggunakan One Way Anova dan Duncan. Hasil: Formulasi permen jelly yang paling disukai yaitu formulasi F1 yang memiliki kadar air 52,29%, kadar abu 0,28%, protein 11,76%, lemak 0,02%, karbohidrat 35,65%, serta total kalori 189,68%, dan kandungan zat besi 0,71% mg dan vitamin C 14,1%. Kesimpulan: Penambahan ekstrak serai dan ekstrak tomat meningkatkan kandungan zat besi dan vitamin C produk permen jelly. Secara organoleptik disukai oleh panelis.
