Buah pepaya adalah buah yang mudah mengalami pembusukan sehingga diperlukan suatu pengolahan untuk meningkatkan daya simpan dari buah pepaya yaitu dibuat menjadi selai lembaran. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan hidrokoloid serta konsentrasi sukrosa terhadap karakteristik fisik dan organoleptik selai lembaran pepaya. Rancangan Acak Lengkap (RAL) Faktorial dengan 2 faktor yaitu penambahan hidrokoloid yang berbeda (konjak, karagenan, campuran konjak dengan karagenan), dan penambahan sukrosa dengan konsentrasi yang berbeda (45%, 55% dan 65%), ini merupakan metode dalam penelitian ini. Data yang diperoleh akan dianalisis dengan Analysis of Variant (ANOVA) kemudian diuji lanjut dengan DMRT. Hasil penelitian menunjukkan adanya penambahan hidrokoloid dan konsentrasi sukrosa yang berbeda berpengaruh nyata terhadap nilai karakteristik fisik dan uji organoleptik kekenyalan, sedangkan hasil uji organoleptik terhadap nilai kelengketan, rasa, warna, aroma, dan overall tidak berpengaruh secara nyata. Perlakuan terbaik menurut panelis adalah selai lembaran pepaya yang dibuat dari campuran konjak dengan karagenan serta gula 55%.
Breastfeeding mothers currently need food to facilitate breast milk so that babies get good nutrition and prevent stunting. The partner of this PKM activity is UKM Athaya Kitchen. To market their products sustainably, partners need e-commerce. This PKM program is carried out at UKM Athaya Kitchen by developing e-commerce, training, and mentoring in selling with e-commerce. The results of this program are the establishment of e-commerce for selling the the milkyflow breastfeeding biscuits, increasing the ability and knowledge of partners in using e-commerce. In addition, it can increase their marketing reach to be more comprehensive; more products sold so that the partner's economy will improve.
This study investigated the toxicity of heavy metals such as Cu, Fe, Cr, Zn and Mn and the influence of water quality in Garang Watershed Semarang (Banjir Kanal Barat River), Central Java Indonesia for enhancing fisheries food security. The fish biomarker in this research is Nile Tilapia (Oreochromis niloticus). The range of Cu, Fe, Cr, Zn and Mn in aquatic environment were 0,15 mg/L; 0,82 mg/L; 0,025 mg/L; 0,562 mg/L and 0,01mg/L. The range of Cu, Fe, Cr, Zn and Mn in Nile Tilapia were 2,547 mg/kg; 306,3 mg/kg; 0,36 mg/kg; 16,69 mg/kg and 35,6 mg/kg. Toxicity in fish is exceeded the limits of food security regulation in WHO and BPOM, and water quality regulation in Government Regulation of Indonesia No 82/2001 on Water Quality And Water Pollution Management. Management in water quality is and toxicity is important for enhancing fisheries food security. Maintaining food security in the fishery sector is very important for the stability of community nutrition because with good food public health will be guaranteed.
