Effects of live yeast (Saccharomyces cerevisiae) in steam-flaked corn-based diets fed to natural-program beef cattle on growth performance, total tract apparent digestibility, carcass characteristics, and feeding behavior were evaluated in a randomized block design experiment. Steers (n = 144; 341 ± 7.03 kg) were blocked by initial BW and assigned randomly to 1 of the 3 treatments (n = 12 pens per treatment with 4 steers per pen). Treatments included the following: 1) control (CTL; no yeast); 2) low yeast (LY; 1.5 g/animal daily [3 × 1010 CFU]); and 3) high yeast (HY; 3.0 g/animal daily [6 × 1010 CFU]). Technologies such as implants, ionophores, and antibiotics were not used, and the steam-flaked corn-based finishing diets were fed to provide ad libitum access to feed. Yeast was included in a cottonseed meal-based premix as 1% of the dietary DM. Spot fecal samples (twice daily for 5 consecutive days) and diets were composited by pen and analyzed for acid insoluble ash to estimate apparent total tract digestibility of nutrients. Cattle were slaughtered on days 183 (4 blocks) and 204 (8 blocks). Dry matter intake (P ≥ 0.29), ADG (P ≥ 0.17), and G:F (P ≥ 0.33) did not differ among treatments. The percentage of Premium Choice (P < 0.01) carcasses increased linearly with increasing yeast inclusion in the diet. A quadratic response was observed for total tract apparent digestibility, in which steers fed LY had greater digestibility (P < 0.01) of DM by 5.4%, OM by 4.8%, NDF by 15.2%, ADF by 20.2%, CP by 6.2%, and ether extract (EE) by 2.5% compared with steers fed CTL. Feeding behavior was not affected (P = 0.28) by treatments. Live yeast improved digestibility of DM, OM, CP, EE, and fiber, without changing feeding behavior and growth performance of natural-program steers fed steam-flaked corn-based finishing diets.
Sixteen ruminally cannulated crossbred steers (529 ± 45 kg initial body weight, BW) were used to evaluate in situ dry matter (DM), neutral detergent fiber (aNDF), and N degradation characteristics of low-quality prairie hay, blood urea-N (BUN) and rumen fermentation parameters in steers provided a protein supplement with or without Micro-Aid ® (MA; plant derived saponin). Steers were allowed ad libitum access to chopped prairie hay (49 g crude protein (CP)/kg DM and 738 g aNDF/kg DM) and randomly assigned to one of four treatments: (1) no supplement (C), (2) cottonseed meal and wheat middlings: 920 g DM/d (PC; positive control), (3) MA added to PC to supply 1 g MA/d (MA1), and (4) MA added to PC to supply 2 g MA/d (MA2). Steers were individually supplemented 920 g DM once daily at 08:00 along with a vitamin and mineral mix to ensure requirements were met. Orthogonal contrasts were used to determine the effects of protein supplementation, addition of MA and level of MA inclusion. During in situ phase, forage samples were incubated for a 96 h period. Protein supplementation increased DM intake (DMI), particulate passage rate (Kp), and rumen digestibility of DM and NDF (P < 0.001), but there was no effect on rumen N degradability. The inclusion of MA did not impact DMI in either phase. Compared to PC, MA decreased K p (27.8 and 22.7 g DM/kg/h, respectively; P = 0.02), resulting in an increase in rumen aNDF and DM digestibility (P < 0.001). However, there was no influence of MA on apparent total tract digestibility in the metabolism phase. Rumen protozoa concentrations were suppressed (P = 0.01) with MA inclusion while lactate concentrations and microbial crude protein (MCP) flow to the small intestine were increased (P = 0.05). There was no impact on BUN, rumen ammonia, pH, volatile fatty acid (VFA) concentrations or N balance for MA compared to PC diets. Supplementation improved N balance, MCP synthesis and increased total concentrations of VFA and independent acetate and propionate concentrations. In conclusion, including MA in protein supplements increased rumen DM and a NDF digestibility of forage, reduced protozoa concentrations and increased daily outflow of MCP. This is indicative of increased rumen fermentation rate and may ultimately impact animal performance via increased energy and amino acid supply to the small intestine. However, more research is needed to validate this potential impact on animal performance.
The objective of this study was to characterize the epidemiology of Salmonella carried by dairy cows culled from herds in the Texas High Plains. Feces were collected from a convenience sample of 706 animals culled from nine dairy farms. In addition, individually paired fecal and hide samples were collected from 70 healthy milking cows on three of the dairies. Samples were cultured for Salmonella using routine methods; isolates were serotyped and subjected to a panel of antimicrobial drugs to determine susceptibility. Salmonella was recovered from 32.6% of culled cows. Whole-herd use of a vaccine containing siderophore receptors and porin proteins was associated (p=0.05) with reduced Salmonella prevalence in that the prevalence among herds that practiced whole-herd vaccination was 8.0% compared to 36.8% among herds that did not use this vaccine. The majority (88.6%) of isolates were pansusceptible or resistant to one drug. Of the 3.1% of isolates resistant to more than four drugs, all were Salmonella Newport and were recovered from one dairy. Various serotypes were recovered from individual fecal and hide samples. Salmonella Montevideo was recovered more frequently (p<0.01) from hide samples, whereas Salmonella Cerro was recovered more frequently (p<0.01) from feces. Salmonella was recovered from at least one cow on all dairies. While our study was not a priori designed to address herd-level factors, we found evidence that the whole-herd use of a siderophore receptor and porin protein-containing vaccine might be a useful aid in the control of Salmonella in groups of cattle. As this is a nonrandomized evaluation of an intervention, other herd-level factors that may be correlated with vaccine use, such as biosecurity, might have been responsible for the observed association.
Effects of a tannic acid blend (ByPro; Silvateam USA, Ontario, CA) added to steam-flaked corn-based fishing diets on beef cattle growth performance, carcass characteristics, nutrient digestibility, fecal N volatilization, and meat lipid oxidation were evaluated. Steers ( = 144; 349 ± 25 kg initial BW) were blocked by initial BW and assigned randomly to 1 of 3 treatments with 12 pens/treatment and 4 steers/pen and fed ad libitum. Treatments included a control (CON; no ByPro) and ByPro fed at 30 or 60 g DM/steer daily (30-ByPro and 60-ByPro, respectively). Pen fecal samples were collected 7 d after cattle were shipped to slaughter for estimation of N volatilization. Strip loins were aged for 21 d for evaluation of color and antioxidant activity. Intake quadratically increased ( = 0.05) from d 0 to 35, whereas linear trends were observed for increased DMI from d 0 to 105 and d 0 to slaughter ( = 0.07 and = 0.06, respectively), resulting in a 3.7% greater overall DMI for 60-ByPro than for CON. No differences were detected for carcass-adjusted ADG ( = 0.65) or G:F ( = 0.17). Carcass characteristics including HCW ( = 0.52), fat thickness ( = 0.32), LM area ( = 0.57), quality grade ( = 0.44), yield grade ( = 0.29), and percentage of condemned livers ( = 0.13) were not affected by treatments. Apparent total tract digestibility of starch linearly decreased tendency ( = 0.03) with increasing ByPro dose, whereas tends for a linear decrease ( = 0.09) in CP and a quadratic increase ( = 0.09) in OM digestibility were observed. No effects of treatment ( ≥ 0.39) were noted for fecal N volatilization. An increase ( < 0.01) in metmyoglobin in strip loin steaks was observed with ByPro inclusion. Oxymyoglobin decreased ( < 0.01) as display day progressed, except on d 5, at which time CON and 30-ByPro steaks had lower proportions than 60-ByPro steaks. Only subtle changes in discoloration ratio and deoxymyoglobin were observed, whereas no effects ( ≥ 0.43) for pH or thiobarbituric acid reactive substances were noted. Feeding ByPro increased DMI during the first half of the feeding period without negatively affecting gain efficiency; however, fecal N retention was not altered by ByPro. ByPro did not negatively affect meat quality or carcass characteristics, and it did not seem to affect retail meat antioxidant activity.
Adolescence is an intense anabolic period. The requirement for all nutrients is increased, but particularly that for dietary calcium. A balanced intake of the macronutrients (protein, fats and carbohydrates) is recommended to prevent the chronic degenerative disorders of adulthood. The temporal pattern of the calorie intake also deserves attention since it may affect homeostatic regulation. Adolescents often show disorders of dietary behaviour predisposing them to both obesity and anorexia. Dietary intervention in this age-group should promote the regular consumption of breakfast, a balanced intake of animal and vegetable foods and an increased calcium supply to maximize bone density. Dairy products and vegetables (mainly enriched cereals) constitute the basis of a good diet for adolescents, to supply their needs for growth and for subsequent good health.
