The lipid oxidation process of Robusta green coffee beans was characterized during accelerated storage for 20 days at 40 °C, 50 °C, and 60 °C. The conventional oxidation indexes and fatty acid compositions were evaluated, and the shelf life of the green coffee beans was predicted using the Arrhenius model. The acid value, iodine value, peroxide value, total oxidation value, thiobarbituric acid reactive substances, and free fatty acid content increased throughout storage, while the moisture content, p-anisidine value, and unsaturated fatty acid content decreased, which suggests that lipid oxidation occurred during accelerated storage. The predicted shelf life of green coffee bean samples were 57.39 days, 44.44 days, and 23.12 days when stored at 40 °C, 50 °C, and 60 °C, respectively. This study provided scientific evidence of the impact of lipid oxidation on the loss of quality during the accelerated storage of green coffee beans.
Only a few investigations were based on limb bone density. This study evaluated the efficacy of soy isoflavone in the treatment of the principal menopausal disorders, limb bone density and the role of pathway. The research protocol involved the random subdivision of the enrolled sample into two groups of 40 women, who were to receive treatment for 6 months with isoflavone (90 mg/day) and with placebo. All of the patients were asked to fill in a questionnaire concerning their complaints. BMD of the radius and tibia were measured using quantitative ultrasound. Bone metabolism indexes calcium, phosphorus and alkaline phosphatase (ALP) were examined regularly. Serum cytokines interleukin-6 (IL-6) and tumor necrosis factor-α (TNF-α) examined by ELISA. The results of the score of Kupperman table showed that the isoflavone can lead to a significant reduction in some of the disorders. Compared with placebo, the tibia bone density in isoflavone group increased obviously against the base value before trail. Isoflavone led to a stronger descent of the concentration of ALP and a decrease of IL-6 and TNF-α level than placebo. For climacteric women, soy isoflavone in the dose of 90 mg/day could improve some menopausal syndromes and was effective on increasing limb bone density, which maybe had the relationship with the levels of IL-6, TNF-α and ALP in serum.
The effect of genistein on Bcl-2 and Bax protein expression in the ovarian tissue of rats
with polycystic ovarian syndrome (PCOS) was evaluated. Sixty rats were divided into six
groups. Rats in the Dose group received genistein at a concentration of either 5 (L-gen),
10 (M-Gen) or 20 (H-Gen) mg per kg of body weight per day. The expression of
Bcl-2 mRNA and Bax mRNA was determined by in
situ hybridization. Bcl-2 and Bax protein concentration was quantified by
ELISA. The results showed that the expression of Bcl-2 mRNA and Bcl-2
protein was significantly higher in the high genistein Dose group (H-Gen) when compared to
the Model group (MG) (P<0.05). Genistein induced higher expression of
the Bcl-2 gene at the transcriptional and translational level. Treatment
with genistein resulted in an improvement of ovarian function with Bcl-2
expression being enhanced and Bax expression being suppressed. These
alterations may be due to the structural and functional modifications that take place in
these cells, and could be related to apoptotic changes that occur in rats with PCOS.
In this study, we examined the association between soy isoflavones and lipid profiles, apolipoprotein levels in patients with type 2 diabetes in China. The study population was composed of 120 cases (80 women with type 2 diabetes and 40 healthy women). Objects in treatment group received isoflavones 435 mg/day for 2 months, then lipid profiles were analyzed by the colorimetry method and apolipoprotein levels were determined by immune turbidimetric method. And all the indexes were determined after oral glucose tolerance test. The levels of total cholesterol, triglyceride and LDL-C significantly reduced and the levels of HDL-C and apolipoprotein A1 significantly raised in the treatment group after intervention (p<0.05). After oral glucose tolerance test, the level of total cholesterol was lower at postprandial 6 h than at empty stomach in treatment group, it had significantly difference (p<0.05). LDL-C levels in the treatment group not only decreased after intervention, but also was significantly lower at postprandial 4, 6 h than in non-intervention group. The ratio of apolipoprotein A1/apolipoprotein B at postprandial 2 h was the highest after treatment in isoflavone group. Supplementation with 435 mg/day of isoflavones exerted favorable effect on the blood total cholesterol, LDL-C levels and the ratio of apolipoprotein A1/apolipoprotein B in Chinese type 2 diabetes women.
The study aims to investigate whether the multielement analysis result can be used as a fingerprint to identify the geographical origin of Wuchang rice. The element contents of rice and soil samples from three regions in China (Wuchang, Qiqihar, and Jiamusi) were analyzed. The concentrations of 16 elements (Na, Mg, Al, K, Ca, V, Mn, Fe, Co, Cu, Zn, As, Rb, Sr, Cd, and Pb) in 194 rice samples and 112 soil samples from the harvest season in 2013 and 2014 were determined. The analysis of variance and linear discriminant analysis were performed to analyze the variation among regions and rice genotypes and classify the geographical origins of rice. Only the element of Cu showed significant differences among different genotypes. In the discriminant analysis, the overall correct identification rates of the rice samples obtained in 2013 and 2014 were, respectively, 96.6% and 89.6% and the overall correct identification rate for Wuchang rice reached 100%.
