Проведена сравнительная оценка качества и пищевой ценности мяса цыплятбройлеров и яиц курнесушек, полученных от птиц опытной группы, в рацион которых добавляли в течение 6 и 4 недель соответственно кормовой концентрат, включающий комплекс биологически активных веществ и пробиотическую микрофлору, в количестве 0,3 к массе корма. В качестве контрольной была группа птиц, получавших только основной рацион. Установлено, что содержание белка и жира в мясе цыплятбройлеров опытной группы выше на 7,02 и 2,44 соответственно по сравнению с содержанием белка и жира в мясе цыплятбройлеров контрольной группы. Содержание фосфолипидов, витаминов А и Е в мясе цыплятбройлеров опытной группы соответственно в 2,12 2,4 и 2,2 раза выше по сравнению с аналогичным показателем контрольной группы. При исследовании кулинарных свойств мяса цыплятбройлеров установлено, что суммарная балльная оценка вареного фарша, приготовленного из мяса цыплятбройлеров опытной группы, составила 46,0 баллов, контрольной группы 40,5 баллов, бульона 39,8 и 38,0 баллов соответственно. Введение комплексного кормового концентрата в рацион молодняка курнесушек способствовало получению большего количества яиц (на 17,1) более высокой пищевой ценности по сравнению с аналогичными показателями контрольной группы. Установлено, что в яйцах, полученных от курнесушек опытной группы, содержится жира на 11,52, фосфолипидов в 2,08 раза, витаминов А и Е соответственно в 2,66 и 2,27 раза больше, чем в яйцах от курнесушек контрольной группы. Содержание вкаротина в желтке яиц от курнесушек опытной группы в 4,4 раза выше, чем в желтке яиц от курнесушек контрольной группы. Comparative evaluation of quality and nutritive value of meat of broiler chickens and egg laying hens, obtained from birds of the experimental group in which diet was added for 6 and 4 weeks respectively feed concentrate including biologically active substances and probiotic microflora in the amount of 0,3 by weight of the feed carried out. The group of birds obtained only the basic diet was as a control. It was found that the protein and fat content in the meat of broiler chickens of the experimental group is higher compared to the protein and fat content in the meat of broiler chickens of the control group by 7,02 and 2,44 respectively. The content of phospholipids, vitamins A and E in the meat of broiler chickens of the experimental group respectively in 2,12 2,4 and 2,2 times higher compared to the control group. In the study of culinary properties of meat of broiler chickens found that the total scoring of boiled minced meat prepared from meat of chickensbroilers experimental group amounted to 46,0 points, the control group is 40,5 points, broth 39,8 and 38,0 points respectively. The introduction of a complex feed concentrate in the diet of young laying hens contributes to the production of more eggs (on 17,1) of higher nutritional value compared to the control group. It was found that eggs obtained from laying hens of the experimental group contain fat by 11,52, phospholipids by 2,08 times, vitamins A and E respectively by 2,66 and 2,27 times more than eggs from laying hens of the control group. The content of вcarotene in the yolk of eggs from laying hens of the experimental group is 4,4 times higher than in the yolk of eggs from laying hens of the control group.
The article presents experimental data on the influence of the feeding diet on the biochemical blood parameters of laying hens. As feed additives in the poultry diet were used: feed vitamin-mineral concentrate (FVMC) in the amount of 0.3% of the basic diet (BD) (1st experimental group), probiotic additive “Bacell-M” in the amount of 0.2% of BD (2nd experimental group), complex feed concentrate (CFC), containing FVMC and probiotic additive “Bacell-M”, in the amount of 0.3% of BD (3rd experimental group). The control group received only BD. It was found that the introduction of the feed additives into the diet of laying hens stimulated the metabolic processes in the poultry body, which was manifested by an increase in a number of biochemical constants. So, the level of total protein in the 1st experimental group increased by 34%, in the 2nd and 3rd experimental groups it increased in 1.43 and 1.42 times in comparison with the control group. The urea concentration exceeded the analogical values of the control poultry by 27% (1st experimental group), by 23.2% (2nd experimental group) and by 24.3% (3rd experimental group), respectively. The use of feed additives influenced the state of carbohydrate and lipid metabolism of hens, which was manifested by an increase in glucose concentration in the groups by 6.3%, 13.1% and 21.5% and by an increase of triglycerides by 13.2%, in 1.7 and in 2.0 times respectively. The inclusion of additives in the feeding schemes contributed to the correction of mineral metabolism, providing more complete absorption of calcium by the poultry, the increase of which in the experimental groups was by 16.2%, 1.68% and in 2.21 times, and also prevented the development of hepatocyte cytolysis, as indicated by a decrease in the activity of hepatoindicatory of enzymes: ALT decreased by 9.8%, 29.5% and in 1.85 times, AST decreased by 7.9%, 12.7% and 18.9%, respectively. The maximum positive effect in the indicators of the biochemical status of laying hens was observed when CFC was used in the diet, which was due to the synergy of FVMC and the Bacell-M probiotic additive.
The purpose of the study is related to the Food Security Doctrine priorities and is aimed at finding ways to implement import substitution with obtaining competitive poultry products–meat and eggs. Feed ration of the experimental poultry was as follows. The control group received basic diet (BD), 1st experimental group received BD with probiotic additive «Bacell-M» (Bacell-M). The 2nd experimental group received BD with vitamin-mineral feed concentrate «Tetra +» (VMFC), while 3rd experimental group received BD with feed concentrate complex (FCC). It was found that feed consumption of experimental groups broiler chickens is lower than in the control group (140.1 kg / 42 days) and is in the range 132.6–134.9 kg / 42 days, while the average broiler chicken live weight 2.32-2.35 kg/unit, and in the control group–2.05 kg/unit. The maximum effect of live weight increase advancing when taking into account the reduction in feed consumption is achieved in broiler chickens of the 3rd experimental group. It is established that the feed additives use in the ration contributes to earlier output of replace herd laying-hens to the egg production. The increase in egg production in relation to the control group amounted to: 147 eggs for the 1st experimental group, 189 eggs for the 2nd experimental and 217 eggs for the 3rd experimental group. The nutritional valueand biological active substances (BAS) concentration of broiler chicken meat and eggs from experimental group hens exceeds the nutritional value of control groups meat and eggs.
Изучено влияние кормового витаминно-минерального концентрата (КВМК) «Тетра+» на потребительские свойства свинины, в том числе пищевую ценность, технологические и кулинарные свойства. Объект исследования – свинина второй категории от отобранного из поголовья опытной и контрольной групп молодняка свиней массой 100 кг, находившихся на откорме 140 дней. Поросята контрольной группы, начиная от подсосного периода, получали основной рацион (ОР); поросята опытной группы получали КВМК «Тетра+» в количестве 1% в дополнение к ОР. Охлажденное мясо от молодняка свиней обоего пола контрольной и опытной групп оценивали по органолептическим показателям спустя 48 ч после убоя. Определено, что образцы свинины, полученной от опытной группы (ОГ) животных, содержат на 4,1% больше белка по сравнению с образцами свинины от контрольной группы (КГ), при этом доля влаги и жира в образцах мяса от ОГ ниже на 3,08 и 1,10% соответственно. Содержание фосфолипидов в свинине от ОГ на 0,32% выше, чем в свинине от КГ. Установлено, что влагосвязывающая способность мышечной ткани свинины от ОГ на 3,11% выше аналогичного показателя КГ; потери при тепловой обработке свинины от ОГ на 2,17% соответственно ниже. Кулинарно-технологический показатель мышечной ткани реберного отруба свинины от ОГ выше на 0,15 единиц. Суммарная дегустационная оценка образцов вареной свинины опытной и контрольной групп составила 44,3 и 39,7 баллов соответственно. The influence of feed vitamin and mineral concentrate (FV&MC) «Tetra+» on consumer properties of pork, including nutritional value, technological and culinary properties, was studied. The object of research is the second category of pork from the experimental and control groups of young pigs weighing 100 kg that were fattened for 140 days. Control group pigs received the main diet; experimental group received FV&MC «Tetra+» in an amount of 1% in addition to the main diet. Chilled meat from young pigs of both sexes of the control and experimental groups was evaluated by organoleptic parameters 48 hours after slaughter. It was determined that samples of pork obtained from the experimental group of animals contain 4,1% more protein compared to samples of pork from the control group, while the proportion of moisture and fat in meat samples from the experimental group of animals is lower by 3,08 and 1,10%, respectively. The content of phospholipids in pork from the experimental group is 0,32% higher than in pork from the control group. It was found that the moisture-binding capacity of the muscle tissue of pork from the experimental group is 3,11% higher than the same indicator of pork from the control group; losses during heat treatment of pork from the experimental group are 2,17% lower. Culinary and technological index of muscle tissue of the rib cut of pork from the experimental group is higher by 0,15. The total tasting score of cooked pork in the experimental and control groups was 44,3 and 39,7 points, respectively.
