Results of conducted experimental studies of the nutritional value of the developed dry soluble gerodietetic product for enteral nutrition are presented. Content of proteins, fats, and carbohydrates (22.8, 11.8, and 56.4 g/100 g of dry product, respectively) was determined and calorific value (422.8 kcal/100 g) and mass fraction of macronutrients in it were calculated (21.5/25.1/53.4 respectively). Their compliance with recommendations of specialists to satisfy nutritional needs of older people, in particular, those with increased physical and neuro-emotional loads, certain dysfunctions, somatic diseases, injuries, and recovering after them were analyzed and determined. Qualitative and quantitative amino acid composition of the product was studied, the rate of its essential and conditionally essential amino acids was calculated on its basis, coefficient of discrepancy of its amino acid composition was found (17.14 %) and biological value of the protein component (82.86 %) was calculated. Experimental studies of the vitamin value of the developed product and its elemental structure were carried out. The dry product has a fairly high content of vitamins (especially ascorbic acid, retinol, thiamine, pyridoxine) and mineral elements (potassium, calcium, phosphorus, magnesium, iron, iodine, selenium). Based on the obtained results, an average level of satisfaction of the daily need for the studied vitamins (on average within 14–41 %), mineral elements (mostly by 10–25 %) from consumption of 100 g of dry product in the prepared liquid state was calculated. The conducted studies have shown high nutritional value, in particular calorific and biological value of the product and conformity of its composition to the needs of the older age groups
A popular trend in the development of society, contributing to the provision of a healthy diet, preserving the environment, minimizing harmful emissions, is the focus on the production and consumption of organic products. A common way to confirm the organic properties of certain products is to certify their production and circulation. Production and export of organic products is largely realized at the expense of the countries of Eastern Europe, where the volume of areas suitable for organic production exceeds 3 %. The military aggression of the Russian Federation has become a threat to environmental and economic security, a challenge to the global system of food supply, environmental well-being. To preserve the environment and restore the economy, organic production is important, ensuring its certification in accordance with generally accepted standards. The object of this study is the certification of organic production and circulation of organic products. The importance of certification in enabling the effective work of organic market participants is analyzed. The would-be branches of organic production, the mechanism, the main stages, the features of its implementation, as well as the results, have been established. The analysis of the main standards for compliance with which certification of production and circulation of organic products was carried out. Certification bodies that have the right to issue inspection certificates for export to the EU have been identified. It was established that certification of organic production greatly contributes to the practical provision of environmental conservation, guaranteeing minimization of the level of use of synthetic, harmful substances and their emissions, stimulating participants in the agricultural business to be more attentive to the preservation of the environment and natural resources.
Основу сучасного аналізу якості сокової продукції становить матричний підхід, що базується на визначенні низки показників, які комплексно характеризують склад соків. У зв'язку з цим, під час оцінювання соків, окрім загальних показників якості, актуальним є дослідження вмісту окремих біологічно активних компонентів, вміст яких залежить від походження сировини та технології переробки. Аналіз хімічного складу томатів показав, що характерними нутрієнтами, які притаманні саме даному виду овочів, є каротиноїди. В зв'язку з цим, найбільш прийнятним критерієм ідентифікації було запропоновано вміст β-каротину. З метою підтвердження способу виробництва томатних соків, а саме методом відновлення чи прямого віджиму, проведено дослідження їх якості за органолептичними та фізико-хімічними показниками (вміст розчинних сухих речовин, загальна кислотність, масова частка м'якоті та вміст β-каротину). Результати профільного аналізу показали, що найбільше позитивних показників відмічено у соків ТМ «EosBio», ТМ «Galicia», що дає можливість стверджувати про їх виробництво способом прямого віджиму. Встановлено, що масова частка розчинних сухих речовин, титрованих кислот та м'якоті у всіх зразках відповідали вимогам. Найбільша масова частка м'якоті була в соках ТМ «Galicia»-30,80 та ТМ «EosBio»-24,23, що підтверджує виготовлення даних соків методом прямого віджиму. Встановлено, що вміст β-каротину в соках ТМ «Sandora», ТМ «Rich» та ТМ «Садочок», виготовлених способом відновлення, знаходився в межах 0,24-0,32 мг/100 г. При цьому, в соках ТМ «Galicia» та ТМ «EosBio», які виготовлені способом прямого віджиму, даний показник суттєво вищий-0,589 та 0,591 мг/100 г відповідно. Таким чином, підтверджено припущення про взаємозв'язок між способом виробництва та вмістом β-каротину у томатних соках й запропоновано використовувати даний показник як маркерний критерій ідентифікації способу виробництва томатних соків Ключові слова: томатний сік, відновлення, прямий віджим, β-каротин, критерії ідентифікації, якісна фальсифікація
It has been established, that the development and implementation of the practice of using biologically active components of nutrition is one of the areas of modern dietetics, which are developing dynamically. Apiproducts are a very promising source of biologically active substances. Fundamental studies of domestic and foreign scientists have proven their high biological value, versatile pharmacological activity (anti-inflammatory, antimicrobial, analgesic, antioxidant, immunostimulatory, anti-radiation, etc.). The use of apiproducts for the prevention and treatment of a number of human diseases is a comprehensively studied phenomenon in terms of beekeeping, botany, chemistry, microbiology, pharmacology, medicine and pharmacy. It has been proved, that the action of individual apiproducts and their components allows to use them effectively in practical apitherapy. Because these products differ significantly depending on their chemical composition, they are divided into two groups. The first includes honey, flower pollen, perga (a product of conservation of flower pollen in a hive) and, in part, drone brood. As mixtures of valuable BAS and metabolites, they are used mainly to increase the biological value of traditional foods and create new compositions. The second group includes bee venom, propolis and, in part, royal jelly, which are therapeutic agents by their nature and are used to correct physiological functions and metabolism, have regulatory effects, and their action is realized through the effect on the lipid matrix of biological membranes and membrane proteins.
