The composition and properties of cream with fat levels from 30% to 70% were investigated. It has been established that the decrease of fat level and, accordingly, the increase of plasma level in the cream leads to significant changes in the physicochemical parameters of the fat emulsion. Accordingly, the production of low-fat dairy products requires adjustment of the cream properties. It has been shown that using different doses of structure stabilizers: QNA colloid as a consistency stabilizer in the amount of from 1 to 2% and the Dimodan emulsifier U/G – from 0 to 1 % (Danisco, Denmark) changes the physicochemical properties (effective viscosity, sedimentation stability) and organoleptic properties (consistency, taste) of cream with fat level 40%. It has been conducted mathematical modeling, aimed to calculate dosing for improving the properties of milk-fat emulsions, structure formation and further ensuring of the necessary consistency of cream pastes. Optimal doses of colloid QNA as a consistency stabilizer and a U/G Dimodan emulsifier have been determined. It has been established that their content should be 1,0% and 0,5%, relatively, for pastes with a fat level of 40%. The effectiveness of the joint action of consistency stabilizers and emulsifiers in obtaining milk-fat emulsions were defined by the level of effective viscosity. Moreover, the use of the emulsifier had less effect on the effective viscosity of the milk-fat emulsions. It has been found that using the structure stabilizers could improve the formation of low-fat products and the formation of the desired paste-like consistency of high-fat cream with a fat level of 70%. Thus, it is possible to adjust the composition and properties of raw material as a basis for milk-fat emulsions by optimizing the ratio of structure stabilizers. Comparative evaluation of the physicochemical properties of milk-fat emulsions and high-fat cream makes it possible to predict their potential for conversion into a creamy paste with a given consistency.

Background. Fermented cream is a common and widely used dairy product throughout the world. The structure of sour cream with a low (10 to 15%) fat content is determined by the acid gel of milk proteins, while that of sour cream with a high (≥30%) fat content is determined by the gel formed by fat globules coated with protein. Sour cream with a fat content of about 20% has an intermediate gel structure, which is not characterized with high viscosity. To increase the viscosity of the product, as well as to prevent the separation of whey during storage, thickeners and stabilizers (gelatin, various types of starch, etc.) are added. As these decrease the sensorial characteristics of products, new thickeners (elamin, citrus pectin, flax seed flour, banana puree, and fromase milk-clotting enzyme preparation) are used instead. Materials and methods. Sour cream was made by separating whole cow's milk, normalization, homogenization, pasteurization and fermenting by mesophilic lactic acid bacteria. Then thickeners were introduced to the clot: elamin, dry banana, flax seed flour in mass fractions of 0.01%, 0.03% and 0.05%, as well as fromase preparation in the same amount. A control batch of sour cream was made without the use of additives. The ripening process lasted from 8 to 9 hours to obtain a dense consistency. The viscosity of the samples was determined using a rotational viscometer, consisting of two coaxial brass cylinders, between which the test liquid was located. The effective viscosity and its dependence on the shear rate γ in research samples as non-Newtonian fluids were determined. Results. Sour cream is characterized by the presence of a structure quickly destroyed by external forces at shear rates greater than 10 s-1 , so exceeding the given value in the production of sour cream is not rational. Завдяки оптимізації співвідношення стабілізаторів структури можна регулювати склад і властивості вихідної сировини як основи для молочно-жирових емульсій. Порівняльна оцінка фізико-хімічних властивостей молочно-жирових емульсій та високожирних вершків дає можливість спрогнозувати їх потенційну можливість до перетворення у вершкові пасти з завданою консистенцією. Мета роботи – дослідження фізико-хімічних властивостей молочно-жирових емульсій як основи для виробництва вершкових паст. Предмет досліджень:. зміни фізико-хімічних властивостей (ефективна в’язкість, седиментаційна стійкість) та органолептичних властивостей (консистенції, смаку) вершків з м.ч. жиру 35% залежно від використання різних доз стабілізуючих систем: колоїдану QNA як стабілізатора консистенції у кількості від 0,5 до 1,5% та емульгатора дімодану U/G – від 0 до 1,0% («Danisco», Данія). Методи досліджень: фізико-хімічні властивості (ефективна в’язкість, седиментаційна стійкість). Результати досліджень. Досліджено склад і властивості вершків з різою масовою часткою жиру від 70% до 30%. Встановлено, що зниження масової частки жиру та, відповідно, збільшення плазми у вершках, призводить до значних змін фізико-хімічних показників, які характеризують стан жирової емульсії. У зв’язку з цим для виробництва продуктів маслоробства пониженої жирності необхідне регулювання властивостей вершків. Проведено математичне моделювання, спрямоване на встановлення доз для поліпшення властивостей молочно-жирових емульсій, підвищення процесу структуроутворення і подальшого забезпечення необхідної консистенції вершкових паст. Визначено оптимальні дози спільного використання колоїдану QNA як стабілізатора консистенції і емульгатора  дімодану U/G. Встановлено, що їх вміст має бути: для паст з м.ч. жиру 35% – 1,0+0,5%. За показниками ефективної в’язкості визначено ефективність спільної дії стабілізаторів консистенції і емульгаторів при отриманні молочно-жирових емульсій. Причому застосування емульгатора менше впливало на ефективну в’язкість молочно-жирових емульсій. Встановлено, що зміна досліджуваних показників (ефективна в’язкість, седиментаційна стійкість) завдяки використанню стабілізаторів структури для наближення їх до показників високожирних вершків з масовою часткою жиру 70% може поліпшити умови для стабілізації структуроутворення низькожирних продуктів та формування бажаної пастоподібної консистенції.
