У рабочих завода свинцовых аккумуляторов установлен повышенный в крови и моче уровень свинца, а также продуктов перекисного окисления липидов, отмечено снижение активности ключевых ферментов антиоксидантной системы, нарушение лейкоцитарно-клеточного, гуморального и клеточного звеньев иммунной системы. Таким образом, повышение антиоксидантного статуса, детоксицирующих и защитных функций организма посредством обогащения рациона сухими белковыми смесями на осно ве кобыльего молока благоприятно сказалось на состоянии здоровья и повышении качества жизни обследуемых. Ежедневное употребление белковой смеси на основе кобыльего молока, обогащенной комплексом иммунных факторов, витаминами-антиоксидантами, пре- и пробиотиками, а также макро- и микроэлементами, благоприятно сказалось на обменных процессах работников перерабатывающей отрасли промышленности, включая выведение свинца из организма, повышение защитных, иммунных, антиоксидантных и детоксицирующих функций организма. Полученные результаты могут служить основанием для широкого внедрения смесей в питании рабочих не только контактирующих с тяжелыми металлами в процессе производства свинцовых аккумуляторов, но и работников горнодобывающей отрасли промышленности в качестве как специализированного, так и лечебнопрофилактического питания. The workers of the lead battery plant have found elevated levels of lead in blood and urine, as well as products of lipid peroxidation, a decrease in the activity of key enzymes of the antioxidant system, a violation of the leukocyte-cell, humoral and cellular parts of the immune system. Thus, increasing the antioxidant status, detoxifying and protective functions of the body through enrichment of the diet with dry protein mixtures based on mare’s milk has a benefi cial effect on the health status and improving the quality of life of the subjects. Daily consumption of a protein mixture based on mare’s milk, enriched with a complex of immune factors, antioxidant vitamins, pre and probiotics, as well as macro-micronutrients, favorably affected the metabolic processes of workers in the processing industry, including elimination of lead from the body, increase of protective, immune, antioxidant and detoxifying body functions. The results obtained can serve as the basis for the widespread use of mixtures in the nutrition of workers not only in contact with heavy metals in the production of lead batteries, but also for workers in the mining industry as both specialized and medical and preventive nutrition.
The article provides information on the development of new functional snacks based on local traditional and non-traditional raw materials. The uniqueness of the composition of snacks is associated with the presence in the recipe of dry mare's and camel's milk, as well as fruit and vegetable purees, dry strains of lacto and bifidobacteria, fucoidan and other food ingredients with increased nutritional and biological value. Evaluation of the chemical composition of the nutritional and biological value of snacks indicates their targeted antioxidant, detoxifying and immunostimulating properties. Functional snacks are recommended for use by the general public, including climbers, pilots of civil and military aviation, athletes, as well as in emergencies and conditions that adversely affect human health.
