“…The SPI dispersions (2.0%, w/v) were prepared by dissolving the lyophilised SPI in distilled water and stirring at room temperature (25 °C) for 2 h. The heated SPC dispersions (HSPC, 2.0%, w/v) were prepared using a jet cooking (JC) system (Nan‐Liang Food Machine Company Co. Ltd, Guangzhou, China) at 130 °C for 90 s and JM‐S0522W 80 kDa hollow fibre membranes (Guangzhou Jason Membrane Technology Co., Ltd, Guangzhou, China) with SPC as a starting material . The Mix was obtained from appropriate amounts of SPI and IS dispersed in water and stirred gently at room temperature (25 °C) for 2 h. The Mix contained 20 mg mL −1 proteins.
