“…The spreading of a sessile drop can either be accelerated or retarded depending on the time scale of the process as well as on the concentration of the volatile component . Importantly, these effects have been detected at a time scale of microsecond to second, much shorter than in the earlier studies on the wetting and evaporation dynamics of volatile binary sessile drops of, e.g., water–ethanol solutions, also under variation of the ambient total pressure. Presumably, in the case of poorly soluble amphiphilic aroma molecules, their fast adsorption–desorption behavior leads to fast changes in the surface tension at the air–liquid interface, dominating over possible effects of the environmental instabilities (temperature or humidity) on the wetting and evaporation of drops.…”
