Addition of Trans-Resveratrol-Loaded Highly Concentrated Double Emulsion to Yoghurts: Effect on Physicochemical Properties

Abstract: Trans-resveratrol (RSV) needs to be encapsulated to maintain its beneficial properties on the human body. This is due to its extreme photosensitivity, short biological half-life, and easy oxidation. In this study, the use of double emulsions for RSV encapsulation and their further application on functional yoghurts was studied. Different types of yoghurts were prepared: with and without RSV and with two types of volumetric emulsion formulations (20/80 and 30/70). In order to study the influence of the addition… Show more

“…Similarly to the simple emulsion, the double O 1 /W/O 2 emulsion showed slightly higher physical stability at 8 °C when compared to 25 °C. In any case, it should be noted that at both storage temperature values, the TSI value was lower than 4 ( Figure 3 ), denoting that double emulsions were fairly physically stable during 7 days [ 24 ]. Alternatively, Diep et al [ 25 ] reported the production of double sunflower oil/water (40–60%)/palm oil emulsions that were physically stable for 4 weeks at 5 °C.…”

“…Therefore, a way to produce high purity resveratrol from cheap raw materials is sought. 29,30 ChRYsIN Chrysin; is a natural flavonoid that is found in high levels in plant extracts, honey, and propolis, and shows antitumoral, antioxidant, anti-inflammatory, and cardioprotective properties. 31,32 It has also been shown to have strong aromatase inhibitory properties and, accordingly, to prevent the decrease in testosterone levels in aged rats.…”
