Abstract: Die Entwicklung niedrig energetischer Lebensmittel ist ein aktueller Trend der Lebensmittelindustrie hinsichtlich einer Einschränkung des Konsums an fett‐ und cholesterolreichen Produkten, die bekanntlich Risikofaktoren für Fettsucht und Gefäßkrankheiten darstellen.
