Amino‐hexose‐reductones as antioxidants. I. Vegetable oils

Abstract: Summary Amino‐hexose‐reductones were evaluated as antioxidants in soybean, cottonseed, and corn oils and were shown to be highly effective by all oxidative and chemical tests. The activity of the eight different reductones was approximately the same in any one substrate. Slightly higher activities were given by reductones of lower molecular weight. Activity was demonstrated at concentrations as low as 0.001% and was shown to be a linear function of the concentration up to 0.02%, the approximate limit of solubi… Show more

“…Similar results were obtained for coffee, which activated NF-kB in macrophages only in the absence of catalase [18]. The reducing properties of ARs, including C 4 -AR, C 6 -AR, and AHR are well established [25,54,55]. In line with these findings, it was recently reported that an AR can inhibit photo-degradation of riboflavin in milk [56].…”

“…Addition of preparations at a level of 5% or above is more effective in prolonging the stability of buffalo ghee than addition of BHA at the permitted level in ghee. Besides these two major classes of compounds, other factors such as tocopherols, carotenoids 4 and sugar/amino acid browning reaction products 30 may also be involved in the effectiveness of MSKP in extending the shelf-life of buffalo ghee.…”

“…Antioxidative activity of MRP has been shown to be concomitant with the development of reducing power by some researchers. [16][17][18] A logarithm plot of antioxidative effect of MRP (100-fold dilution) against reducing power yielded a straight line at initial pHs 5, 7, and 9, respectively (Fig. 2).…”
