“…The β‐glucan properties in cereals are modulated by several hydrolytic enzymes, with β‐glucanase (also called endo‐b‐1,3; 1,4‐ glucanase, 1,3‐1,4‐b‐D‐glucan 4‐glucanohydrolase; GH family 17; EC 3.2.1.73) as the most important among them (Ribeiro et al ., 2011).
