Abstract: This study aims to determine the nutritional content, glycemic index, and glycemic load dragon fruit peel marshmallow and red spinach with the addition of stevia. This is an experimental syudy. The data collected in this study includes organoleptic data, nutrient content, glycemic index, and glycemic load.
